Recipe suggestions while I recuperate
Something (the doctors are still unsure exactly what) sent me to the ER on Monday, and I'm home now but a little low-functioning. DH is kind of useless when it comes to cooking, and I can still make stuff, but I'm looking for low-involvement meals I can put together during the next week or so. Any suggestions? Crock pot is good, but no recipes that involve cream of crap or onion soup mix or canned mushrooms or other junk like that, please. Thanks!

can hubby chop vegetables and work the oven? buy some chicken breasts and eat for the next couple days. These recipes assume its for 2 people:
Meal 1 - BBQ Chicken
3-4 chicken breasts, plus some sliced onion scattered in there (sliced lemon is good too!). Pour some bbq sauce on the chicken and bake at 350. you CAN add veggies to this as well (carrots and peas, broccoli, etc)
prepare some instant rice to accompany the dish.
Meal 2 - leftover chicken n pasta
Hopefully you have 1-2 chicken breasts leftover. Dice these up and cook some elbow noodles. BBQ chicken and pasta!
(sometimes I add my own really odd sauce concoction to this so that its more saucy than flavored. It really is a 'mix it all and taste it' experiment of bbq sauce, ketchup, water and honey. sounds odd, but somehow tastes good!)
i typically serve this with a garden salad.
the more you can cook and make sure there are leftovers - the easier the rest of the week is. Keeping some cut up chicken ready to go in the fridge is great for sandwiches, salads, etc.
