HI ladies,
I'm hosting Easter this year, and I really want to do one lamb dish and one poultry dish, just to have some variety. My original plan was to make a lamb roast in the oven, and to cook a whole chicken in the crockpot (I want to use the crockpot so I can free up oven space). Unfortunately, I have a feeling the chicken might be a little small. I'm expecting about 10 guests, and even though there will be plenty of other food, I'd like everyone to get to try the chicken if they want to. So...
Does anyone have suggestions for some poultry dish I could cook in the crock pot that might be a good Easter dish? Instead of a whole chicken, should I just use about 10 legs or thighs? SHould I do something else?
Re: Easter Main Dish Idea...in crock pot?
I dont know that its necessarily an Easter dish, but i do have this recipe, called Sticky Crockpot Chicken (FYI its not sticky, lol)
?2 tsp. salt
?1 Tbsp. paprika
?2 tsp. chili powder
?1 tsp. onion powder
?1 tsp. thyme leaves
?1 tsp. white pepper
?1/2 tsp. garlic powder
?1/2 tsp. black pepper
?4 lbs. chicken drumsticks or thighs, skinned if desired
?1 chopped onion
Preparation:
In a small bowl, thoroughly combine salt and all the spices. Rinse drumsticks and pat dry with paper towel. Rub the spice mixture into the chicken, skin side and bone side, making sure it is evenly distributed and pressed down deep into the skin. Place in a resealable plastic bag, seal, place in a baking pan to catch any drips, and refrigerate overnight.
Place the onions in the bottom of a 4 quart crockpot and top with the chicken and spices. Cook on LOW for 8-12 hours or high 4-6 hours until very tender. Serves 8-10
