Our tech team has launched updates to The Nest today. As a result of these updates, members of the Nest Community will need to change their password in order to continue participating in the community. In addition, The Nest community member's avatars will be replaced with generic default avatars. If you wish to revert to your original avatar, you will need to re-upload it via The Nest.

What's for dinner this week?

My H is out of town Tuesday night through Sat morning, so I'm not making anything too involved for just myself the nights he is gone. 

 

Sun- Brie & Apple Sandwiches

Mon- Pulled Chicken Sandwiches w/chips

Tues- Protein Pancakes w/bacon

Wed-  Egg Salad Sandwich 

Thurs- Pierogies

Fri- Pizza

Sat- Black Bean, Corn & Avocado Salad over Quinoa

Re: What's for dinner this week?

  • I'm planning an easy week too, but only because I'm feeling like a lazy cook.

    In no particular order:

    Beef and Snow Pea stir fry

    Baked spaghetti squash and egg cups (carryover from last week)

    Pulled pork and some side

    Shredded Pork Tacos

    Meatball Subs

    Asian pork with steamed veggies and soba noodles

    Probably pan-fried fish for Friday, with a side of baby spinach.

  • Last night was baked cod and a salad of celery root, mandarin oranges and arugula, tonight is honey sesame chicken over quinoa and last over salad from last night, rest of the week is grilled veggie panino, quinoa with grilled squash, chicken and mushrooms.  Not sure which might for which. The other nights are leftover nights. 

     

    Friday, December 28 2012. The day I had emergency appendix surgery in Mexico and quit smoking. Proof that everything has a good side!! DH and I are happily child-free!! No due date or toddler tickers here!! my read shelf:

  • DH closes on Tuesday night and works a mid on Friday night. I haven't though of anything for Saturday or Sunday. But I pulled out a couple of things from the freezer for Monday, Wednesday, and Thursday.

    Chicken thighs - not sure what I'll do. Probably shake n bake

    Pork chops - again, not sure what I'll do. Probably bake them.
