Hi everyone! I post on boards here and there, never before on this one though. I live in NY and am approaching my 1 year anniversary in April, yay! Im hosting some of my husband's family and my parents for Easter Sunday. I have cooked before for a large group but its normally been bbqs- so a little more laid back and stuff I could make ahead of time (pasta salad, potato salad). Our families are very different- his are BIG eaters and mine, well, we dont go crazy with a meal-very low key. Id like to please both and tend to air on the side of healthy cooking. I need help with an Easter menu! Im not big on ham or pork so am trying to stay away from that. Does anyone have suggestions? I google Easter menus and many focus on ham, pork or lamb. Im not an all star either so simple is good in my book! Just looking to make a nice meal that pleases everyone.
Lastly, I can be a bit random in pairing things...my husband gasped when I said roast chicken and potato salad, lol, he says "POTATO SALAD IS BBQ FOOD!". So Im really interested in suggestions. The nieces (7 and 3) are coming too..so I need to have some child friendly elements too. Thanks everyone for reading!

For Easter dinners, I love to do an old fashioned roast. I think I'm going to do roast beef with rosemary this time. The rosemary honestly, if you can get fresh is much better. Score the top of the joint a little and stick the rosemary through. Maybe p
I do a ham for Easter. It is out of the oven early, and it tastes good at room temperature. I also make a corn casserole, green salad, and a vegetable. If you make a good potato salad, that would go great with ham.
On a side not
can you make a pot roast with veggies? pretty easy as far as put it in the oven and go and they're delicious. serve with mashed potatoes and veggies and everyones happy. child friendly elements? huh? it's easter dinner. they'll eat what you cook.
If this is your first time cooking for both families, and with it being a holiday, I'd recommend finding out what they tend to prefer for Easter dinner. I understand you aren't fond of ham, but for some people, that IS the Easter meal and they may feel
I think an Italian menu would work. You could make a big pot of gravy the day before, and serve it with some ravioli. As for meat, an easy option would be meatballs and Italian sausage. If you're not comfortable making meatballs,
