So we just moved into our new house last night and got all the priming done from the AWFUL colors. What color would you do in a kitchen, very open, with white tile floors and oak countertops?

We have white cabinets, white backsplash and black granite countertops with oak floors. We painted the kitchen a shade of green somewhere between apple green and moss green, and it really makes the white pop! Don't be afraid of color. Most kitchens have enough cabinets, windows and appliances that the surface area that ends up painted is not that huge. That's why kitchens are a great place to be bold with your color choices - less painted surface area means the color choice will be less in-your-face.
Some other ideas - oak has some gold undertones. A warm gold, pumpkin or something along those lines would bring those out and make your kitchen seem inviting. Colors in the yellow/orange family also trick your brain into thinking about food, which is why they're popular colors in restaurants.
