I used to be vegetarian, but slowly went back to eating meat Lately, the thought of eating meat has been making my gag. I would really like to go back to a vegetarian diet. My husband says he would we fine with a vegetarian diet, but that anything like fake meat/tofu etc, he thinks tastes gross.
Do you guys have any suggestions for veggie meals or tips to make vegetarian meat or tofu taste pretty good? Even when I didn't eat meat, I thought some of the fake stuff tasted a little funky too. Any suggestions would be super great!

I have been a vegetarian for years and my husband is not. So I can certainly understand your dilemma. I am not a fan of fake meat products either so its important, in order to get enough protein in your diet, to embrace beans, nuts, seeds, dairy and whole grains. For some dinner ideas I would recommend using edamame in a stirfry instead of meat and serving it over brown rice or quinoa instead of white rice, using mushrooms and spinach in lasagna or putting black beans and avocado in a taco or fajita.
I like to make my own wontons, stir frys and funky pasta meals. Tonight's dinner is super yummy.
Take extra firm tofu (drained and patted dry) and cut into flat triangles.
drizzle with olive oil and season each side with Herbs de Provence, salt and pepper.
Grill on a griddle for a couple minutes on each side until it turns golden brown.
In the meantime take one whole avacado (nice and ripe) juice and zest of one lime, a 1/2 cup of fresh chopped parsley, 1 garlic clove, 1/3 cup extra virgin olive oil, 1/2 cup veggie broth and salt and pepper.
Toss in food processor/blender and run til creamy.
Pour cream over the tofu triangles

Why you want to be vegetarian? If you love non-vegetarian food, then no need to change your taste.
If you really want, then take mushrooms, pasta and tofu.
