Hello everyone! I'm new to this board...so hopefully it's ok if I just jump in and post! It's also been a while since I've posted (mostly on "the knot") so feel free to correct my posting mistakes! I'm trying to become a little more creative with my meal planning....seems like its the same old stuff every week around my house!
Monday....Salmon Wellington and rice
Tuesday... Pork chops and roasted red pepper bake, roasted potatoes, peas
Wednesday...linguine and clam sauce
Thursday...breakfast for dinner (bacon, eggs and French toast)
Friday...(using up leftovers from salmon and breakfast) chicken stuffed with spinach, blue cheese/feta and bacon, corn on the side
Saturday...eating out
Sunday....Raviolis, salad and garlic bread
Christy- my husband would love to eat at your house. Your menu is always right up his alley. I'm a more boring eater.
here is my two week list
Penne alla Vodka with garlic bread (leftovers from freezer)
Beef Pepper steak over white rice
Creamy Tortellini
Copy Cat Panera Broccoli Cheddar soup ( trying this for the first time, i hope it comes out good)
Ranch Chicken breasts with a side and veggie TBD
Cream Chicken Bake with stuffing and veggie
Snow crab legs with cornbread
Aw, thanks for the compliment. I'm always looking for something new to try, and fortunately my husband is pretty much willing to try anything. And you're menu doesn't sound boring!!

Christy are you making the SkinnyTaste Enchilada recipe? They are SOOOO good! I use natural sour cream and full fat cheese, though...I don't like the additives in the low-fat stuff.
Also, I'd love the recipe for the Avocado Chicken Parm. It sounds so interesting!

This week DH is off for a few days, so he's going to do some grilling for me!
Grilled Pesto Shrimp skewers with salad and garlic bread
Tilapia Tacos with Cucumber-Radish Relish
Pork Chops with Apples and Onions, served with Polenta and salad
Baked Macaroni and Cheese
Chicken veggie stir fry
Pizza topped with Grilled Vegetables and Sausage.
We'll probably eat out on Saturday. :-)

I didn't realize Skinnytaste had a similar recipe, I'll have to go find it and check it out!

Tonight - Meat loaf and mashed potatoes
Tuesday - I'm on my own
Wednesday night - Sloppy Joe grands (roll-over from last week)
Thursday - Jalapeno Pork Chops (Salt and vinegar receipe subbing jalapeno chips)
Friday - I'm on my own
Saturday - Crockpot orange chicken

sorry this is so late...I just now saw your response!
My only recipe is to cover the shrimp in pesto and throw it on the grill. Usually I let it marinade a bit while the grill heats up. So stinking easy.
