What's cooking?

A day late and a dollar short.  Our theme this week is GRILL GRILL GRILL!

Monday: spice rubbed pork tenderloin on the grill, broccoli and quinoa mac and cheese, one of my better dinners.

Tuesday: grilling again!  Bunless burger for me, grilled eggplant/veggie wrap for DH, asparagus, salad and a veggie bowl for the kiddo, since he shuns meat!

Wednesday: DH has softball, so various leftovers for us all.

Thursday: some sort of chicken (I've yet to decide) with peas and unknown starch

Friday: grilled pizzas, likely leftover eggplant and fresh mozz for DH, bbq chicken for me.

Saturday: out and about for various parties

Re: What's cooking?

  • Sunday - grilled some marinated chicken and veggie kebabs and dipped them in garlic hummus.  chips and salsa on the side

    Monday - shrimp/veggie stir fry over rice; salad with cranberries, walnuts, mandarin oranges, goat cheese with pomegranate vinaigrette 

    Tues - leftover shrimp and veggie stir fry and maybe some soup since there isn't a ton of the main leftover

    Weds - Maybe some steaks, asparagus, and potatoes

    Thurs - not sure yet

    Fri - pizza

  • It's a grill week for us too!

    Sun- I had wine and cheese, the rest of the crew had lasagna at MIL's

    Mon- turkey roll ups, mash, garlic spinach

    Tues- grilled burgers with blue cheese for DH and I, sides TBD

    Wed- also doing a spice rubbed pork loin on the grill with a pepper/onion hash

    Thurs- going to pick up steaks to grill, zucchini, rice

    Fri- sushi night with the girls

    Sat- pizza and cake for T3's birthday

  • I have an unholy obsession with roasted red pepper hummus.  Interestingly enough, I heard about this on kyw this morning.

  • Sunday--pasta with asparagus, peas, mushrooms and a lemon cream sauce

    Monday--Salmon, rice and broccoli

    Tuesday--Chicken sandwiches with artichokes and pesto

    Wednesday--Pasta with turkey sausage, tomatoes, arugula

    Thursday--Chicken again, with some kind of rice and veggie

    Friday-Sunday--not sure

    Side note--I used to love hummus so much, but it's been one of my biggest food aversions so far during this pregnancy. I hope I can eat it again soon!

  • Sunday- We were out to dinner with husband's family

     

    Monday- Chicken, mac and cheese, and a vegetable

     

    Tuesday- I am on my own. My husband is staying at the shore tonight to meet the Plumber and Handy Man tomorrow. I will probably just grab a salad or something easy.

     

    Wednesday- I am traveling for work, and will just eat on my way home. He can do the same from the shore.

     

    Thursday- Probably each eat at our parent's houses while we visit them.

     

    Friday, Saturday, Sunday and into next week- We are taking a mini vacation, and wiill eat out for all meals.

    When you grill your pizza, do you place it right on the grates or on a pizza stone?  J follows the Webber instructions, which has you putting the dough flat on the grates for a couple of minutes, and then flip and add your toppings. It's quick, but I think it tastes more like a flat bread than pizza. I'm curious how it would work with a pizza stone, preferably the same one I throw in my oven...

  • Sunday we had leftovers that had to go- some pizza, some pasta and meatballs and garlic bread.

    Monday was baked tilapia, rice, broccoli, and, at DD's request, mac & cheese bites.

    Tuesday will be bean burritos...so easy and so yummy.  Perfect for a night like tonight when we are both working late.

    Wednesday is up in the air.  The past couple of weeks my boss has surprised me with a last minute night off so I can go watch DD's soccer class, so we've gone out to eat...so if she does that again, we will likely use a gift card to grab food out after the practice; if not, DH will likely come up with something since he will be home before me.

    Thursday is pizza night with my boss.

    Friday I'm thinking grilled chicken and veggies and rice.

    Saturday is up in the air too.  I have a late lunch at Melting Pot with some girlfriends- one of them is getting married on an island next week and the rest of us just couldn't swing it to be there, so we are getting together.  Not sure how late it will go and what's going to be going on at home- DH is working on yet another giant house project, so not sure if he will hang with the kids and wait til I'm home and then spend all night doing that or if he will call his mom to ask her to come watch them while he works. It may be a pizza or microwave meal kind of night.

    That's exactly how I do it!  We have a gas grill so it doesn't taste "smokey".  We had a pizza stone years ago that we ended up donating to Good Will because we never used it.

  • Sunday - Pizza with aspragus & boursin (finished the whole thing!)

    Monday - Gritty clams & linguini Sad

    Tuesday - Pho takeout since it's just me

    Wednesday - Hot dogs and some sort of grilled veg & salad

    Thursday - Leftovers from Wednesday since it's just me

    Friday - Jewelry / Tastefully Simple party, so I'll prob just nibble

    Saturday - Grilling, but not sure what
