tonight- pepper steak in the crockpot
tomorrow- creamy tortellini (new recipe i found on pinterest)
wednesday- creamy chicken bake with stuffing and broccoli
thusday- just simple pasta and jar sauce since i usually work out late
friday- take out night

last night - enchiladas and salad
tonight - coconut chicken and rice for Brent, salad for me
tues - Smoky Spice Rubbed Grilled Salmon with Black Beans and Corn
weds - banging shrimp, cous cous, steamed veg
thurs - leftovers
fri - chicken tikka masala, naan, rice for brent, and steamed cauliflower
Tonight I made Taco pie with Goya red beans and rice.
the rest of the week will be (no particular order)
chicken cutlets, rice, string beans
ribs, Mac & cheese ( from a box, I usually do scratch), zucchini

Hi there,
Thought I would join you this week as I've enjoyed checking out your menus for the last few weeks. We eat mostly veggie but I've seen a couple good chicken ideas posted that I'm looking forward to trying. My boyfriend actually does the majority of the meal planning and recipe searching - I'm mostly his sous chef and refiller of the G&Ts.
Last night was broiled salmon with blackbean/cucumber/green pepper "salsa", all over greens.
tonight - pinto bean and cheese "falafel" with avocado sauce - http://www.meatlessmonday.com/pinto-bean-falafel-with-avocado/
tomorrow night (we also had this on Sunday night) - fattoush salad (http://www.eatingwell.com/recipes/lebanese_fattoush_salad_with_grilled_chicken.html) but instead of chicken we put it with chickpea burger pattie and top with a dollop or two of tahini-yogurt sauce (http://www.eatingwell.com/recipes/chickpea_burgers_tahini_sauce.html)
Thursday night - red curry with sauteed veggies over rice
...and that's as far as we've got this week. We usually just shop for a few days at a time since we eat a lot fresh veggies.
