Easy Easy side dish

Made this tonight. Served it with a simple Spicy Shake n Bake mix on chicken cutlets and peas. It was yummy and a nice twist on plain rice.

Easy Mexican Salsa Rice
Ingredients:
2 cups instant brown rice
2 cups water
1 envelope enchilada sauce mix (or you could use taco seasoning)- i used taco
1 cup salsa (I used mild - go as hot as you want!)
1 (4 oz) can green chilis

Directions:
Combine all ingredients together in a microwaveable bowl. Microwave on high for 8-9 minutes, or until rice is tender. Let sit for 3-5 minutes and it will soak up most of the liquid in the bowl. Fluff with a fork and serve.

  • Sound good! I used to make something similar with rice, salsa, black beans and corn. It really made having rice as a side dish a lot more substantial!
