Our tech team has launched updates to The Nest today. As a result of these updates, members of the Nest Community will need to change their password in order to continue participating in the community. In addition, The Nest community member's avatars will be replaced with generic default avatars. If you wish to revert to your original avatar, you will need to re-upload it via The Nest.

Made this tonight. Served it with a simple Spicy Shake n Bake mix on chicken cutlets and peas. It was yummy and a nice twist on plain rice.
Easy Mexican Salsa Rice
Ingredients:
2 cups instant brown rice
2 cups water
1 envelope enchilada sauce mix (or you could use taco seasoning)- i used taco
1 cup salsa (I used mild - go as hot as you want!)
1 (4 oz) can green chilis
Directions:
Combine all ingredients together in a microwaveable bowl. Microwave on
high for 8-9 minutes, or until rice is tender. Let sit for 3-5 minutes
and it will soak up most of the liquid in the bowl. Fluff with a fork
and serve.
