Re: Weekly Dinner Menu- 5/19/13

  • Tonight- im having family over for my mom and grandpas birthday- we are having london broil with roasted potatoes and corn salad. My parents are also bringing a regular salad

    Sunday- probably something easy or take out

    Mon- Sausage and Peppers on Rolls

    Tues- Crunchy French onion chicken with corn spoon bread and a green veggie

    Wed- Tacos

    Thurs- Maybe grilled chicken

    Friday- maybe date night since my DH is on vacation

  • Sunday-  Grilled chicken sandwiches with coleslaw.

    Monday-  Crockpot ribs, baked beans, fruit salad.

    Tuesday- Roasted Vegetable Mac & Cheese with a spring mix salad.

    Wednesday-  Spicy sausage pasta skillet.

    Thursday-  Leftovers.

    Friday-  Coney Dogs with fries and veggies.

    Saturday- I'm going out of town, so my husband will fend for himself with leftovers;)

  • I am just cruising the boards and found this post about menu planning... Mind you I am not married yet but we do have a house together and are getting married next year. I am a very busy professional with not only a day job but my own business as well so cooking is something that I do not have a lot of time for... I am trying to get some quick and easy ideas for dinner that I can put together on the fly and just throw in the oven or have the fiance do it when he gets home... I could use any ideas because he does not cook so I am the one doing it pretty much... Any suggestions?
  • Tonight we are at ILs, so leftover brats, chips, dip, etc...

    Monday: Chicken Egg Rolls (Rollover from last week)

    Tuesday: Pizza

    Wednesday: Venison Enchiladas with Corn Casserole Jalapeno Cornbread

    Thursday:  Out with BIL? or Breakfast Burritos

    Friday: Slaw Dogs with Mac N Cheese (one of my favorite meals ever!!)

    Saturday: BIL's birthday dinner: Papa Johns Pizza

    Enchiladas would be quick and easy, esp. if you have the protein cooked ahead of time, then you or he could just stuff, roll, cover with sauce and cheese and bake.

    I cheat and use a rotisserie chicken to save time instead of cooking chicken.

    I've made quiche filling in advance before so then my H or I can just pour it in the pie crust and bake when we get home.   

    Quesadillas are pretty quick and easy.

    What about slowcooker meals? Ready when you get home?

  • This week we are finally getting back to normal!

    Sunday: Soy-balsamic roasted chicken with rosemary, quick risotto, and glazed carrots

    Monday: Garden vegetable Alfredo pasta

    Tuesday:  Tilapia with mango salsa, brown rice, and green beans

    Wednesday:  Farmer's market frittata plus a side salad

    Thursday: Pork chops with apples and onions and polenta (still haven't made this...)

    Friday: Steak on the grill with cheesy potatoes (cooked in a foil packet) and salad.

    Saturday: Out!

  • Those sound awesome and for the most part easy... I have 2 crock pots... a small one and then one the size of roasting pan that was a gift from FMIL. I also have a rice steamer and practically a full kitchen that I brought with me... Yes I love to cook but do not have a whole lot of time between work and my side business. 

     

    On the menu for tonight is : crock pot chicken with white sweet corn on the cobb and garlic bread... Tomorrow night I do not know as my fiance is trying to plan something and Saturday I am out with the girls and he has game night so for him it may be a pizza and beer kind of night and for me cocktails and sushi :)
