What's cooking?

I've been a severe slacker in the meal planning department.  Also, it bears repeating that this board is dead.  Therefore, I am reviving this post to a) get some people back and b) put myself back into planning mode.  Who picks the week before a holiday to rededicate themselves?  This dummy.

Monday: Ham slice, mashed sweet potatoes and peas

Tuesday: BLTs for H and DS, BLE for me (e = egg)

Wednesday: Pasta with fresh pesto (made from CSA contents)

Thursday: H has softball so salad for me.  Likely some fresh veggie/fruit assortment for DS since that seems to be his favorite.

Friday: Not sure, I'd love to grill but it depends on the weather.  Otherwise, maybe paninis or something.

Saturday: We have a sitter and are going out with friends. I cannot wait.

Re: What's cooking?

  • Tonight I'm taking some students out to dinner - so probably a sandwich of sorts.

    Tues - maybe a pork tenderloin (I think I have one in the freezer), sweet potato fries and zucchini

    Weds - work event

    Thurs - something easy with no leftovers

  • Sunday- made a big batch of sausage and gravy so we had spaghetti.  I also slow roasted the chicken breast for M/W dinners.

    Monday- Chicken poppy and a veggie

    Tuesday- I have a study session for an exam in October so either takeout or grilling some steaks

    Wednesday- Buffalo Chicken Taquitos

    Thursday- Sausage and peppers sandwiches or something fast.  We leave for HS rowing championships that night.

    Friday/Saturday- rowing

    Sunday- no clue where we will be.... depends on the weather

    Monday- london broil, sweet potatoes, broccoli

    Tuesday- tortellini w garlic scape pesto

    Wednesday- HOME OWNERS!!!!! I am thinking takeout on the floor of our new house with our boys.

  • Tonight- Salads and wraps b/c I have an appt tonight

    Tuesday- Out to eat

    Wednesday- My husband is going to a work thing.  I am having bacon and eggs.

    Thursday- We are running errands and getting stuff together for the shore.  I am thinking eating out again.

    Friday- We will eat on the way to the shore or order in when we get there.  Hello Summer, we have missed you.

    Saturday- Steak on the grill, vegetable and potatoes at home b/c it will be crazy crowded to go out to eat.

    Sunday- Chicken on the grill, vegetable and potatoes at home b/c same reason above.  We may come home Sunday night depending on weather, and when his family plans to celebrate his Dad's birthday.  I am voting to come home on Sunday to miss the dreaded traffic.

  • Sunday--dinner out with the family

    Monday--Portobello and Zucchini tacos

    Tuesday--Caprese Paninis

    Wednesday--Pasta with bolognese sauce

    Thursday--Greek salad

    Friday--last minute errands for vacation. Takeout, most likely

    Saturday-June 7--Vacation! Off to Chicago, Seattle and Vancouver. If anyone has any recs for things to see/do/eat while there, let me know!

    my planning is as always - non existent We are having our dining room/kitchen renovated, one room at a time, and my dining room is in my living room, and the kitchen is a dust ball. For those who have had this done, how did you work around this with not eating out every night? AND we don't have a microwave (we had one, but we never used it, and my parents were in need of a new one, so we gave it to them).
  • I am feeling kind of blah today about planning, cooking and just life in general. After a failed attempt at the store yesterday without my list and with two whining children who then fell asleep leaving me to unload two sleeping kids and a truck full of groceries 1.5 blocks away from the house in the rain, I came home with the following:  a pork tenderloin, twin pack of London broil, chicken breasts, gnocchi, spinach, string beans, broccoli rabe, and yams. Make of it what you will for dinners this week. Happy Monday!

    We will hopefully be heading to the shore Friday so the weekend will consist of boardwalk pizza, fries, and lots of BBQ food

    this  brings back horrible memories! The slow cooker can be your best friend. You can make just about anything in there. Also if you have a foreman grill, a toaster oven or sandwich press these can come in handy as well. You can just buy the ingredients as you need them. A pain but better than take out every night. Good luck!

  • I did great last week with planning, and this week just looks sucky.  I am so overwhelmed with issues at work that I can't clearly focus on anything else right now. But here's what I've got...

    Tonight: Breakfast for Dinner- omelettes and potatoes

    Tomorrow: Frozen pizza- I have a kickoff for a program at work so will be stuck working late, and DH has to work late, and we have a frozen pizza stored at my parents' house in their freezer...so I just told DH to grab the frozen pizza from there when he picks up the kids.

    Wednesday: DH and the kids are going to dinner with DH's dad...so I'll probably just heat up a frozen dinner or make soup or something when I get home from work.

    Thursday: have to talk to my boss when she gets back from her trip tomorrow...we usually do pizza but now with this program I'm running it changes up some stuff.  Not sure if we will still try to do pizza night or if I will need to plan something.  If I have to plan, probably will do bean burritos since I have all the stuff and they're easy to do after a long day/night.

    Friday: I am hoping to visit my great aunt, so will probably grab take-out (Wendy's) if so...she is homebound and her big treat is having a Wendy's burger when I visit and can pick one up for her.

    Saturday/Sunday: no clue yet.  Lots of plans up in the air, including a BBQ invite, possibility of a friend visiting for the weekend from Boston, and another friend who is turning 30 but can't make up her mind about if she wants to go out and celebrate or not.

    Ha! We did this a few years ago. I lived on cereal, prepared foods from Trader Joe's and we ate out--often.  It was the most stressful summer of my life, but in the end it was all worth it!

  • Sunday: Date Night-Thai food

    Monday: Spicy Shrimp with asparagus and caprese salad

    Tuesday: Skinny Taste Pork Chops with dijon herb sauce with a side of perogies

    Wednesday: Skinny Taste Chicken Tikka Masala

    Thursday and Friday: Working second shift so maybe leftovers or Wawa

    Saturday: Working 8-4 so we will probably end up going out to eat

    Which we had last night and will have again tonight. 

    Tomorrow:  Probably stir fry, unless there is enough of the casserole left over.

    Thursday: Going to an event, so dinner there.

    a combination of what babe and erbur said. We cooked things in batches at other people's houses that we could microwave or put in the toaster oven. It sucked. Our families also invited us over a lot! Now I have a semi finished kitchen and if only I could use it! It's cafeteria food for me all week.

    thanks ladies for the suggestions.  Its a painfully slow project, but it will be worth it in the end.
