Growing herbs and need to use them
I'm growing basil on my window sill and it is really starting to take off. My basil is huge (the leaves are about 3 inches) but I'm running out of ways to use it. Anyone have any fun recipes for basil that are not pasta or grill based? (I've made too many combinations of pasta sauce with it and do not have a grill).

Make pesto and freeze it for the deep of winter! I like to use it for pasta, pizza, chicken and shrimp.
Basil is also good if you mix it in mayo for BLT's or use it in panzanella or pasta salads.

I grew fresh herbs last year in our garden, then brought them into the house and placed them in the window during the winter.
When it grew faster than I could use it, I'd put the herbs on a microwaveable plate, and microwave them on low until they dried. Then I'd put the dried herbs in an airtight containter to use as I would any dried herb from the grocery store.
I'm making crostini's tomorrow that use fresh basil. It's just ricotta cheese, garlic, chopped fresh basil, salt, and pepper on top of toasted bread. Really yummy.
Also you can make a dip using feta, cream cheese, roasted red peppers, and fresh chopped basil. Heat it in the oven for 15 minutes.
