Simple grilling recipes?

My H and I are on the road to healthier eating. He is a tough egg to crack in terms of branching out of his normal meat, cheese and carbs. he barely eats veggies and might eat fruit if i cut it up and pack it for him. It's like having a child:)

He does however enjoy grilling and we have grilled out the last 4 nights. I'm running out of kabob ideas ! any ideas you ladies have for healthy, simple grilling?

our faves include; chicken and pineapple, sirloin and peaches, shrimp and pineapple, sweet potatoes and veggies.

  • One summer we made this about every 5th night.  We love it!  The recipe says thighs, but I use it with breasts and it's just as good.  It's super quick for weeknights - walk in the door, throw everything in a ziplock to marinate, then go change clothes, have a beer, preheat the grill, then it's ready for the grill!

    This is one of my favorite recipes of all time.  Also super simple.  The sauce is divine and hardly takes any effort - don't skip it.

    These are my favorite kabobs with a healthy rice side (maybe your DH would eat the veggies if they were mixed into the rice?)

  • if you get one of those grill pan things you can grill your veggies too. that might make a big difference for him.

  • I have quite a few regulars for you that we use all summer long

    we love this shrimp recipe!!- Grilled Herb Shrimp

    2 pounds shrimp- peeled and deveined, tails on

    3 cloves minced garlic

    1 medium onion, minced

    1/4 c fresh parsley, minced ( i have done a smaller amount of dried)

    1/4 c fresh basil, minced  ( i have done a smaller amount of dried)

    2 tsp mustard

    1 1/2 tsp salt

    1/2 tsp black pepper

    pinch of red pepper flakes

    1/4 c olive oil

    1 lemon, juiced

    1/2 tsp sugar

    Combine all ingredients and toss to coat shrimp. Allow to marinate at room temp for up to an hour or you can marinate in fridge for up to 24 hours. 

    Prepare grill, Thread shrimp on skewers. Grill for about 2 mins on each side.

    Found this recipe on the back of the Worcestershire sauce bottle and its so easy and yummy- can be used on steak, chicken or veggies

    1/2 cup italian dressing

    1/4 cup Worcestershire sauce 

    1/4 tsp black pepper

    1 or two pounds of beef, chicken, pork, or fish OR 4 cups of veggie mix

    Combine first 3 ingredients and marinade for 5 mins and then grill til done. 

     

    This recipe is from my dad, no idea where he got it but we LOVE it. 

    Steak Marinade

    1/3 cup olive oil

    2 cloves minced garlic

    2 Tbsp red wine vinegar

    1/3 cup soy sauce

    1/4 cup honey

    1/2 tsp pepper

    Score your steak and marinade for at least two hours then grill.
