Weekend Lunch Ideas?

I need some ideas for lunches on the weekend. During the week, on my days off, I'm content making an egg sandwich or quesadilla. When I work I usually take leftovers from dinner. Same for my H. But on the weekend when we are home I never seem to have anything planned for lunch, and our Friday dinners usually do not yield leftovers. I'm not a huge fan of lunch meat. I usually only go shopping on Mondays for the week so by the weekend it wouldn't last anyway. My H does not like egg salad or tuna salad. 

We do not eat red meat or pork. Just poultry and seafood (but there's really not a lot of seafood I like).  With having nothing planned for lunches on the weekends, we usually resort to grazing, eating cereal, frozen pizza or frozen pierogies. It's getting boring and I'd love some new ideas!

  • Maybe a soup or salad?  I like to make a grilled cheese and my DH and I will each have half and supplement with soup or salad plus fruit.  Or you can make extra grilled/ baked chicken during the week, slice it, and add it to the salad or soup.  

    Sometimes I just eat greek yogurt (for protein), fruit, and pita or veggies with hummus.  I'm a lazy launcher though.  When I'm feeling ambitious I'll zap a nitrate free Turkey hotdog (Oscar Meyer's are good) in the microwave for 30 seconds and eat it with a slice of whole wheat bread as the "bun." Weird, I know, but it works for me.

  • I ditoo PP's idea of splitting a sandwich and having soup or a salad with it. DH and I usually do this.

    Other ideas:
    taco salad: romain lettuce, black beans, corn, salsa, sour cream, guac. you can add chicken, too!
    fruit smoothies/protein shake: favorite fruit, with ice, and yogurt or milk in a blender. add high fiber greens and/or protein powder to keep you full. I will make these and a little chicken quesadilla for DH and I for lunch.
    breakfast for lunch?
    also try looking up different pasta salad recipes- they are so yummy and easy to make. and the recipe ideas are endless!

  • I make brunch either sat. or sunday and we eat around 1030-1130am. Then we snack on cheese, crackers, olives, hummus, salsa and chips and other minchies arpund 2 or 3 and then dinner around 6ish.

    brunch i make combinations of  frittats, french toast casserole, muffins, fresh fruit, latkes and so forth. :)

    on the other day- we'll make a homemade pizza, make a simple soup or do amy's burritos. I also stock the freezer with leftovers in single serve containers so we may have some potpie, a few meatballs or stuffed shells. Always have things for salads on hand for me and h is happy with good old pb and j if he wants!

  • This time you should try some home made chicken related item. Also mix some vegetables in it.
