Dear Community,

Our tech team has launched updates to The Nest today. Freezer cooking

Anyone have success with this?  I don't really have any reason to do it (i.e. new baby, moving..) I'm just too lazy to cook lately.  I do the macaroni type ones (baked ziti, lasagna, stuffed shells) it's the protein ones that I need help on!

Please share success stories, tips, tricks and recipes!!

  • I've made the following 2 recipes, then frozen them before baking with success.

    The burritos blog post has instructions for freezing. For the rollups, I just lay them on a cookie sheet covered with wax paper and freeze for 1/2 hour or so, then place in ziplock bag and continue freezing. This way they don't stick together and you can take out just the amount you need. I usually do them at 350 for about 20 minutes or so to warm through, then will spray the tops with cooking spray to brown them.

  • I would like to make more.  When I make a lasagna, I usually double the batch, so I have one in the freezer.  That's about it for my freezer cooking.  I went to a Tastefully Simple Freezer Meal party - and I was not impressed with her recipes.  But, I do want to try some of my own meals and freeze them.

  • I took a freezer meals class, and I learned to use extra sauce and/or cream.  I make giant batches of vegetable soup in the fall, when produce is cheap.  Just undercook the veggies and barley, and then freeze in bags.  Delicious through the winter.
  • You should purchase a ziplock food container which preserve your food for the long time.
