My DH works in another city and we're packing up his bachelor apartment to move next week. The freezer is FULL of frozen veggies! Apparently the boy doesn't understand moving and that you stop shopping and use up what you have! I've already made chicken pot pie and veggie soup. How else can I get rid of these things?
- 1 bag peas
- 2 bags peas & carrots
- 2 bags mixed veggies
- 4 bags corn
We're taking a week-long road trip on the way to the new place, so we can't just pack them in a cooler.
There's a going away party for us next week, so suggestions for potluck sides are good. I'm already planning on this to use some of the corn.

Ditto PP on the fried rice. I use 1 cup (uncoocked) for DH and I.
Cook the rice the day before. The rice will not fry if it isn't cold. It will just turn into a mushy rice blob. Get the pan really hot with butter/olive oil and fry the rice for a few minutes. Add soy sauce and fried rice seasoning. Scramble 2 eggs and add to rice. Add your meat (or not for veggie fried rice). Add frozen peas and carrots. Serve with seafood (yum yum) sauce and enjoy!
