Wanted: Mexican Bean Soup Recipe

Hello! Ive just put a mexican mix of beans out to soak over night and Im wondering if anyone has any yummy recipes for a Mexican bean soup? The package didnt come with a recipe unfortunately. Thanks in advance!

  • I would put in a can of Rotel or a cup or so of salsa. Then add some whole kernel corn, some fresh cilantro, and a little cumin. If you want meat in it, you could add some cooked shredded chicken. I make a quick version of this with canned black beans.

    Here's a recipe that I've made a few times. It's been passed around to several families so it's been a hit!

     

    15.5 oz Goya Black Beans or 1-2 Packages dried black beans

    1 Extra large onion

     Handful of Parsley and Cilantro

    6 Garlic Cloves (or more if you prefer)

    3 Tbs. Sherry

    1 Pkg of Sazon (look in the mexican aisle in the market)

    1.5 Tbs Tomato paste

    5 Shakes of hot sauce

    2-3 Tbs Pepperocini juice

    3 Pepperocini's, chopped

    1.5 Tbs Balsamic Vinegar

    1 Tsp Sugar

    1/4 Tsp Salt, Pepper and Red Pepper Flakes

    1 Lime

    *Olive oil for the sautee*

     

    Saute onion in olive oil

    Add herbs and garlic, cook until almost soft

    Add sherry and sazon

    Add tomato paste, hot sauce, pepperocini and peppercini juice. Bring to a simmer.

    Add balsamic, sugar, seasonings and beans. Cook for 1/2 hour and then add the juice of the whole lime. Cook until soft, about 1 hr.

    Process 2/3 of the soup.

    You can garnish with chopped red onion, scallions, sour cream, avacado. You can also serve with white rice.
