I'm attempted to get back into diet mode. I've been in holiday mode since, um, November.
Sunday: roasted turkey breast, mashed sweet potatoes, peas and roasted beets
Monday: grilled teriyaki chicken, carrots, brown rice, mashed cauliflower
Tuesday: leftovers
Wednesday: ravioli and salad
Thursday: http://www.foodnetwork.com/recipes/giada-de-laurentiis/chicken-sausage-skewers-recipe/index.html We picked up some sundried tomato basil chicken sausage so I may skip the marinade or do something more Italian style.
Friday: unsure as DH has poker and it's just me and the kid.
Saturday: I have a baby shower so I may prep some calzones or pizzas with homemade cherry tomato sauce.
Re: What's cooking?
The only thing I feel like eating lately are ice cream and milkshakes, but I threw together this menu for the week instead:
Last night--Pasta with turkey sausage, tomato and arugula
Tonight--Chicken with a tomato and olive relish, rice on the side
Tomorrow--Zucchini and black bean quesadillas that didn't get made last week
Wednesday--working late. Gross catered food.
Thursday--Portobello mushroom burgers
Friday-Saturday--who knows
Tonight - shrimp and asparagus stir-fry over rice
Tues - sausage, peppers, onion sandwiches
Weds - leftover stirfry for me, DH is golfing
Thurs - leftover sausage for DH, I'm going out with my mom, aunt and sister
Fri - pizza night
I plan my meals two weeks at a time:
I'm on night shift this week so the name of the game is "What Will Reheat Well Tomorrow"
Tonight- Skinnytaste Sloppy Joes in the crock pot.
Tuesday- Haiwaiian Chicken in the crock (again)
Wednesday- Honey Mustard Chicken in the.. wait for it... crockpot.
Thursday- Pasta. I got tired of thinking
Friday- JEGs is on his own since I don't need anything reheated the next day
Saturday- Pesto Chicken and Tomato Kabobs
Sunday- Burgers
(Day Shift! We can eat like normal people again!)
Monday- Eggplant Paninis
Tuesday- Pork tenderloin and apples
Wednesday- Our 3rd anniversary! Getting a sitter and going OUT
Thursday- Avocado, bruschetta and mozzarella chicken
Friday- The hubs is in a wedding on Saturday so we are headed out to Lancaster for the rehearsal dinner
Saturday- wine, wine, maybe some cold catered chicken, and more wine.
Sun- We ate out at the shore
Mon- crabs and macaroni, salad
Tues- salmon, rosted broccoli with lemon and brown rice
Wed- Grilled spiced chicken and extra for lunch leftovers, zucchini, baked potatoes
Thurs- I am going out to dinner with a friend, the crew will have tacos
Fri- eat on the go
Sat- we will be at the shore so wherever the wind leads us that day will determine what we eat
