what's cooking?

Yay for a break from the heat but boo for thunderstorms this week.  I hope we can use our grill a little.

Sunday: I made a roasted tomato basil sauce with tortellini for my boys.  I don't care for tortellini but I'm told it was good.

Monday: Bobby Flay's perfect burger and dogs with corn on the cob all on the grill.

Tuesday: chicken marsala with roasted asparagus and roasted purple potatoes

Wednesday: leftovers likely from Tuesday

Thursday: DH has softball so we'll have our easy meal.  Ham steak, peas and mashed sweet potatoes

Friday: I found this recipe for chicken quesadilla pie that looks pretty easy.  I might chop up some veggies to throw in there.

  • Jess- post the tomato basil sauce recipe you used, I know I can google but I prefer tried and true. I am actually on my game this week with a plan... Sun- We were all in different places, no dinner cooked Mon- pork roast however DH decides to cook it, roasted potatoes and broccoli Tues- sausage and broccoli rabe in white wine sauce over orecchiette pasta, side salad Wed- attempting a pinterest recipe: pineapple chicken skewers and I will add peppers and onions along with the fresh pineapple the recipe calls for, and brown rice Thurs- possibly heading to shore if not linguini and clams since I have all the fixings for it already Fri-Sat- at the shore, no planning allowd

  • Um, I'm going to go with a big, fat nothing.  We ripped out our kitchen over the weekend.  For some reason, I thought everything would be a-ok since our fridge and stove would be hooked up.  I guess I forgot that everything would be packed away...

    If anyone has any easy dinner ideas, feel free to send them my way!

    I feel your pain.  I was without a kitchen for 2 months.  Finally have water and the gas back as of last week.  My house is still a mess and far from complete.  This project is really wearing on me.

    Two months??! I think we are looking at one month, and I can't even deal.  We don't have kids, which is our only saving grace.

    yes, 2 months.  Hopefully your renovation goes a lot faster.  We had some structural issues, had to completely rip up the floor, etc.  Not fun, but at least our kitchen walls won't fall down.

    I looooove mac & cheese, but have always been hesitant to try it in the crock pot because I hate mushy pasta.  If you have a recipe you love, please post!

  • Tonight - I had planned on pasta bolognese, but then I realized we had leftover pasta from last week.  So I am making my bolognese sauce, but freezing it for post-baby and reheating pasta with shrimp and asparagus for tonight, with salad and italian bread

    Tues - chicken tacos with corn and mexican rice

    Wed - baked croque monsieurs with peas

    Thurs - chicken marsala with roasted potatoes

    Fri - shrimp and broccoli stir fry over brown rice

    Sat - burgers on the grill

  • This week is nutso- both mine and DH's bosses are away, my dad (my regular sitter) is away, and it's the last full week of the summer classes I've been doing with the kids.  Oh, and our house is listed finally so we could get a call at any time to prepare for a walk-through. So, trying to come up with easy, tasty meals to help keep our sanity!

    Monday- leftovers from eating out on Sunday for my grandmom's birthday.

    Tuesday- Cheesy taco hamburger helper- sadly enough not chosen out of desperation- I planned this because I really want to try it. Embarrassed

    Wednesday- sausage & peppers

    Thursday/Friday TBD...I'm thinking either bean burritos or chicken enchilada casserole In the crock pot at some point...

    Saturday- friend's engagement party/BBQ so I'm going to make a dip and a dessert and we will head there as soon as I'm done work and eat there.
