I take a zumba class twice a week from 6:30-7:30, so by the time I get home I'm starving! H works until 8pm so he can't make dinner. I was wondering if you ladies have any favorite quick meals?
One of our favorites is hot Italian turkey sausage with diced Italian tomatoes over angel hair pasta. It takes about 15 minutes and there's no prep.

i do the same thing during the week-zumba!
I usually plan on a quick pasta with fresh veggies in garlic and oil or I use my crockpot so that i can eat right after I get home.
Just this past week we had shredded chicken tacos over rice. The chicken cooks in the crock all day and i just used a 5 minute rice. In the winter i do alot of stews. And sometimes i go as simple as pasta and jar sauce.
Shredded Chicken Tacos
4 boneless chicken breasts
1 can corn undrained
1 can black beans undrained
1 can diced tomatoes undrained
1 package taco seasoning
Mix all ingredients including can juices into the crockpot. Cook on low 8-9 hours. Shred chicken into pieces and stir. Serve over rice or as tacos with all the fixings.
Taco salad is a favorite! Also, pasta primavera!

I usually sub sunflower seeds for the pine nuts because they are cheaper.
These Beef & Boursin sandwiches take 15 minutes max, and they are one of my husband's favorite sandwiches. The ingredients will last a couple of days, so you could make 1/2 the recipe both nights you have Zumba.
These Spicy Bean Burrito's are also quick since you are only warming canned beans as opposed to cooking a meat.
Sloppy Joes made with ground turkey, or tomato basil soup with grilled cheese are also quick & easy to put together.

A really quick, nice summer dinner is to cook up either some tortellini or ziti, toss with grape tomatoes, fresh basil, olive oil and S&P. If I'm using ziti, I usually toss in some diced fresh mozzarella too. I run the pasta under cold water to chill it down a little bit, so it's warm, but not hot. A little warmth really brings out the flavors so nicely, and so fresh. You can even toss the tomatoes, basil and oil in the bottom of the pot you cooked the pasta in to warm it a little bit.
Another really good, fresh summer dinner, but I'm not sure if it would be filling enough after a work out, is a stuffed tomato. I love it with tuna salad, but chicken or shrimp salad is good too. Use your favorite recipe, or pick it up at your favorite deli, and cut a large, ripe beefsteak tomato with a criss cross pattern, and fill the salad inside. You could do a three bean salad along with it. Canned grean beans (I know, I know, I never ever use them except in this, and you can sub it out for any other bean), chick peas and red kidney beans, rinsed and drained, thinly sliced onions, sliced olives if you like them, and small chunks of cheddar if you like. A quick oil/vinegar dressing or bottled raspberry vinaigrette, and you're good to go.
As it gets colder, I like a good beef or mushroom barley soup in the crockpot with crusty bread, salad if you like. So good, and it can cook all day while you're gone, or overnight the night before.

GABride2010 H is from some weird universe where you don't do breakfast for dinner. It's an unfortunate adjustment I've had to make for the sake of love, but I will whip up an omelet if he's not around! <?xml:namespace prefix = o ns = "urn:schemas-microsoft-com:office:office" />

Slice up a zucchini & cook on a griddle pan for about 1 minute on each side with a little EVOO + salt & pepper. Assemble sandwiches with your favorite bread, store-bought hummus, tomato, onion, fresh spinach & a slice of cheese (we like muenster). So yummy and pretty healthy too.
Shrimp & Grits:
Saute frozen peeled shrimp with your favorite seasonings and a little olive oil. Serve over slices of store-bought polenta or quick-cook grits and a little parmesan.
Grilled fish tacos:
Cook your favorite fish filets on a griddle pan with mexican seasonings. Serve on tortillas with your favorite toppings. These are my go-to's: cilantro, shredded cheese, salsa verde & a little fresh spinach or lettuce for crunch.
Avocado Breakfast cups:
Slice an avacado in half. Take out the pit, and crack an egg into the hole in each half. Top with cheese, herbs, bacon bits or whatever you like, and bake for 5 minutes at 375.
