can anyone replicate the chocolate glaze coating on Hostess and Entenmen's doughnuts? I've been trying to find a recipe but I'm stumped.

You should page Jenn and ask her. She makes these amazing chocolate covered peanut butter balls. The chocolate coating on them is darn close, IMO, to what you are looking for.
She posted the recipe, which I have at home, not here at work. I know it has paraffin wax in it, of all things, to give it that shiny look.
I melt semi-sweet chocolate chips and parafin wax in my fondue pot (you can also use a double boiler) for the peanut butter balls that Mindy was talking about. You have to work fast with it though as the parafin causes it to harden pretty quickly. I usually make multiple small batches to keep it from drying up while I'm working with it.
