This is our go-to meal when we feel like something warm and satisfying, but don't really "feel" like cooking. Since I'm coming down with something and have no energy, we will be having it tonight.
Please note, this is a vegetarian recipe and while you could substitute 1 pound of ground beef for the veggies crumbles, you really do NOT notice the difference once everything cooks together (snuck it past my carnivore FIL who turns up his nose at everything vegetarian!) You can find the veg crumbles in the frozen foods section. It sounds like a weird concoction, that I was skeptical of, but now I love it!
Vegetarian Casserole
Preheat oven to 350/Brown 1 package of Morningstar Farms veggie crumbles (also known as Grillers Recipe crumbles) in a dash of vegetable oil on med-low heat. Season to taste with pepper, a little salt and a little garlic powder. Do not overcook.
While crumbles are browning, cook a 4 oz package of instant mashed potatoes according to package directions.
When crumbles are done, mix them in a lightly greased casserole dish with a can of tomato soup (we use the reduced sodium Campbells) and a a can of drained french style green beans (also use reduced sodium). Mix well.
Spread mashed potatoes evenly over crumble mixture.
Top with 1/2- 3/4 8 ox bag of shredded cheddar cheese. (we use the reduced fat kind)
Cover and bake for 30 minutes. Remove cover and bake for an additional 5 minutes. Remove from oven, cover and let stand for about 5-10 minutes. Enjoy!
