I was at work the other day and looking at a menu for a new restaurant that sent us a flyer. Under sandwiches they listed Pig's Ear sandwiches on fridays only. Uhmm I have lived here in St. Louis since I was 11 and I have never heard of Pig's Ear sandwiches. Cow tongue maybe but not pig's ear. I mean those are dog treats. Has anyone else heard of this? Is this a St. Louis thing?
Re: Pig's Ear Sandwiches
I can't say that I've heard of pig ear sandwiches but after working at a grocery store in South St. Louis back in the day I've seen my share of cow tongue and pigs feet come across the belt. I've heard of people eating brain sandwiches here and in Indiana. After googling it I found this

complete with pics of it halfway down. It's boiled to make it more tender apparently.
