Anyone have a broccoli, chicken, recipe?

I have been looking around, but does anyone have some sort of cheesy, chicken and broccoli recipe, casserole is what i am thinking, but I'll take any suggestions.

Thanks!

Re: Anyone have a broccoli, chicken, recipe?

  • hmm... no, sorry. What about broccoli, chicken alfredo?
  • my mom used to make this chicken broccoli casserole dish.  i think it was just chopped up chicken with cream of mushroom soup and then broccoli on top of that and then she would sprinkle the top with either bread crumbs or ritz crackers i think.
  • This is a staple in our house, but I'm not home and don't have the recipe at hand... Here is a rough recall...

cut up the chicken and cook on skillet in italian dressing. add in brown rice, broccoli, and chicken broth (i think it's 1.25 c broth)- cook till rice is to your liking. add in cheddar cheese (however much you like works). you can also add diced onions. it is ready to serve at that point or you can put it in a casserole dish in the oven to keep warm :)  sorry for not knowing the exact amt of rice- i want to say 1.5-2 c- you can tell when there's enough in there once you mix it based on the amt of liquid.

Also, we do the same type of thing... do the chicken the same way, cook up some pasta, steam the broccoli, put all together with butter and mozz cheese.  (or olive oil and garlic in place of the italian dressing to cook the chicken)

    Yum!

  • I do what ann11/11's mom does.

Boneless chicken tenders- saute them in olive oil with seasonings of your choice

Layer those in a baking dish

    Layer broccoli spears on top

Pour a mix of cream of chicken and cream of mushroom (or broccoli cheese soup) over top

    Sprinkle mozz cheese over that

Top with bread crumbs and bake for maybe 25 minutes on 350ish.  You don't have to bake for too long since the chicken is already cooked.

  • CHICKEN DEVINE
1 (16 oz.) pkg. frozen chopped broccoli, cooked and drained
2 c. white chicken meat, cooked
2 cans cream of chicken soup
1/2 c. Miracle Whip salad dressing
    1 tsp. lemon juice
    10 slices cheese
    1 c. bread crumbs
Place cooked, drained broccoli in bottom of greased 9x13 inch pan. Place chicken pieces on top. Combine soup, salad dressing and lemon juice and pour over chicken. Top with cheese slices and sprinkle with bread crumbs. Bake at 350 degrees for 30 minutes. Serves 6 to 8 people.

  • Thanks so much ladies... looks like it is all basically the same. I will be trying it out this week! Thanks!
