Cooking help - separating eggs
We are going over to friends' for dinner on both Saturday and Sunday nights (yes, I am popular, lol). I am bringing dessert to both. Saturday's dessert is a lemon tart and Sunday's is cupcakes.
To make the tart, I need 9 egg yolks - 6 for the lemon curd and 3 for the crust. I plan on making the curd on Friday night and the crust on Saturday. I need 4 egg whites for the cupcakes, which I won't make until Sunday morning.
So, how long will egg whites keep for? Any recs on how to store them? Worst case scenario, I'll just make the frosting on Friday night too, but I'd rather do it on Sunday so they are fresh.

LOL...it is two very different crowds. Hipster fashion designers and techies on Saturday, children and elderly people on Sunday. I aim to please.
