Turkey Virgin

DH and I are doing Thanksgiving at our house for the first time. Any suggestions on an EASY but yummy turkey recipe. I'm not sure if I'm skilled enough to brine one, it just sounds difficult :) TIA

  • Google Alton Brown Turkey.  That one looks really good and easy.  I'm trying it this year.

  • Brining honestly isn't hard at all. I buy the brine mix and brining bags from Williams-Sonoma. It's a tad pricey, but makes for the best tasting and super-moist turkey. I also really like the convenience of a bag. I brine it over night, storing the bag in an ice-chest (b/c I have a small fridge). It works really well.

    Alton Brown did a special on the Food Network that aired last week called Dr. Food Network...I'm sure they'll be playing it again over the weekend...it went through all the steps of making the perfect turkey.  Here's a helpful link to his http://www.foodnetwork.com/topics/turkey/index.html
     

  • Brining would be my first suggestion--it's not as hard as you think if you have space in a refrigerator to hold the big bucket.

    I made a tasty turkey once by making a paste with raw bacon and a bunch of herbs, and stuffing it under the skin of the turkey.

    But if this is your first bird...you might just want to keep it simple. I wouldn't recommend getting a huge bird (more likely to dry out); if $$ isn't an issue, buy a heritage turkey, like a Bourbon red. And don't open the oven 700 times to check the bird while it's cooking. It doesn't need to be basted.

     

  • Thanks for the link and tips (es: not to open the oven frequently, I most likely would have done that!) I was actually looking at that Alton recipe already but concerned about the brining part (my fridge is pretty tiny) I'd like to try the ice chest idea, most likely the only place I could fit a bowl and turkey that size. Should the brine be made morning of, or day before? Thanks again!
  • You make the brine the day before so that the turkey can brine overnight. The ice chest works great, even more me in Hawaii, so it should be fine for you as well.

    Alton does a good job explaining it...check out the link I gave. I think there may even be a video or two with the recipe. And if you're home over the weekend, or have DVR, check the Food Network channel for the Dear Food Network Thanksgiving show--AB gives step by step directions.
