So if I don't have this cranberry jello on T-day I am seriously inconsolable.

Cranberry Salad
 
2 small pkgs of raspberry jello
2 cups boiling water
Dissolve jello in water but do not add any cold water
 
Stir in:
1 can whole cranberry sauce (be sure to use whole cranberry sauce)
1 large can of crushed pineapple (or 2 small cans) use juice and all
 
After the jello sets up spread the top with a mixture of one large package of cream cheese mixed with one small carton of sour cream. I usually use my mixer to beat these together so they get nice and smooth and creamy.
 
Top with:
A couple handfuls of chopped walnuts
 
This stuff is addictive!!

  • I can each of fruit cocktail (large can), pineapple chunks and mandarin oranges - drained

    1 small container sour cream

    1 container Cool Whip

    1 bag of mini marshmellows

    Mix everything together in a large bowl and refridgerate over night

     

    I have to make this every holiday or else the kids and my brothers will pout all night!

    Savory Bread Pudding with Gruyere

     

    ? cup unsalted butter (? of stick)

    2 shallots, sliced

    ? cup white wine

    6 large eggs

    2?  cups heavy cream (or Half & Half)

    2 teaspoons salt

    1 teaspoon white pepper

    2? cups Gruyere cheese (about 10 ounces)

    2? cups Swiss cheese (about 10 ounces)

    ? cup fresh chives, chopped

    ? cup fresh sage, chopped

    ? cup fresh marjoram, chopped

     

    1 pound loaf of day old French bread, cut into ?? pieces

     

    Preheat oven to 350 degrees convection

    Butter a 7? X 11? glass baking dish

     

    Saut? shallots in butter until soft.  Add wine and simmer for about 3-5 minutes to reduce the wine to ? cup. Set aside.

    Whisk eggs, cream, salt and pepper in a large bowl, add shallot wine mixture.  Combine the cheese and herbs together.  Add all but 1 cup cheese to the egg mixture then carefully fold in the bread pieces.  Allow to stand a minimum of 1 hour. 

    Pour into prepared pan and sprinkle with remaining cheese/herb mixture.

    Bake bread pudding until golden and puffed, about 40 minutes.  Cool 10 minutes.

     

    This can be made the day before, bring to room temperature before baking.

     

    Serves 8

  • Sweet Potato Souffl?

     

    ?      1 can sweet potato drained (short stubby can)

    ?      1 ? cup sugar

    ?      2 eggs

    ?      1 cup evaporated milk

    ?      2 sticks of butter or marg.

    ?      ? teaspoon nutmeg

    ?      ? teaspoon cinnamon

    ?      ? cup brown sugar

    ?      ? cup crushed cornflakes

    ?      ? cup chopped pecans

     

    Mix sweet potatoes, sugar, eggs, evaporated milk, 1 stick of melted butter, nutmeg and cinnamon.  Beat w/electric mixer until smooth.  Lightly spray a 9X12 casserole dish and pour mixture in dish.  (I have found that it is easier to use a potato masher to mash the sweet potatoes before you add the other ingredients).

     

    For topping: Mix brown sugar, crushed cornflakes, nuts, and 1 stick of melted butter together.  Put on top of sweet potato mixture.  Don?t worry; it will spread out as it cooks.

     

    Bake at 350 until set for 35-40 minutes.

  • Alisa---I think I might make this. I've never had a special cranberry recipe---I think I'll do this and then also have some canned on hand.

  • I make the jello salad in a glass 9x13 pan. The usual glass baking dish. Totally easy!
  • Yum those all sound so good! You guys rock! The only thing I make on Thanksgiving is the reservation for the restaurant. Haha!
