NER: Suggest a cheesecake for me
NOT pumpkin and NOT apple (we already have pumpkin pie and apple pie) and NOT plain.
I am unsure how the one I made last night will be, I dont think it came out great.
Also what am I doing wrong wtih my water bath/foil? water leaked through my foil, through my springform

and I KNOW a water bath is a key to cheesecake success....

translation: springform pan is onw that comes apart... the sides latch on so when its done baking you can take it out wihtout having to flip it. Problem is, if you cook it in water, it can leak. So you wrap the pan in foile to prevent that. My foil is also leaking though!
You cook cheesecake (and other similar consistency things like pot de creme, etc) in a water bath because it helps it cook more evenly. Its just water in a roasting pan with the cheesecake pan in the water.
What she said. I've been toying with the idea about getting a springformpan to try a cheese cake (DH loves them) but after that whole water bath thing, I think I'll put that on the back burner.

I didnt use the spring form and it came out pretty well. I just put the cheesecake dish into a larger dish with warm water.

This is absolutely delicious. I used this recipe the first time I made a cheesecake, and it turned out perfectly. Did I mention the candied ginger, fresh ginger, AND gingersnap crust?! YUM.
I suggest getting the HUGE super-sized foil, then doubling the foil. If you use the standard sized foil, it doesn't cover the entire springform, and water can leak in.
