NBR: Weekly Menu - What's on yours?

There was some interest in doing this weekly, so let's share!

I'm not cooking much this week. I have two concerts to go to and a hair appointment. Tonight I'm doing something quick, probably Texas Hash and corn on the cob. I'll do chicken with a brown sugar and mustard glaze on the grill if the weather is good. I also have stuff for chicken Suiza tacos. 

What's on your menus this week?

  • Monday- Chicken Tortilla Soup & homemade salsa

    Tuesday- Shrimp jambalaya

    Wednesday- Garlic Porkchops with sweet potato mash & crispy Brussel sprouts

    Thursday- sausage and kale soup

    Friday- Date night, no cooking

    Saturday- Take out

    Sunday- Lazy day casserole ( veggies, potatoes, italian sausage)
  • I haven't been to the grocery store yet so I have no idea about the whole week. Tonight I think is Trader Joe's Crab Cakes, Corn, and Fried Green Tomatoes.

    Tuesday: Movie & Dinner Date Night

    Wednesday: Tacos

    Thursday: Pasta w/ peppers and maybe some meatballs

    Friday: Mac and cheese "bar" where we have like little toppings to make our own different kinds.

    I made a lot of chili in the crockpot yesterday, so we're going to eat that a few days this week.

    I think DH said he's planning to make some kind of asian chicken/veggie stir fry with rice.

    We're hoping to use up some breaded and frozen eggplant that's been in our freezer for ages, so I think we might also have eggplant parm one night.  I dislike because the eggplant is sliced really thick, so I dread when DH makes me eat it.  I usually end up just having a bowl of pasta, eating 3 bites of my eggplant and then telling Dh he can finish mine.
  • Sunday - Cider Beef Stew with homemade honey wheat bread

    Monday - Feta Stuffed Turkey Burgers with Grilled Zucchini on the side

    Tuesday - Seared Sea Scallops with snow peas and rice noodles

    Wednesday - Hamburg Stroganoff

    Thursday - Hoisin Glazed Pork Chops w/ Napa Cabbage Slaw on the side

    Friday - Fend for yourself night because Booney is going to a book signing.

  • This week is "use up our pantry" week.

    Monday: Fending for myself since J's with vendors. Probably a veggie burger.
    Tuesday: Portobello mushroom burgers and squash
    Wednesday: Grilled chicken, side TBD
    Thursday: Some sort of pasta bake
    Friday: TBD

    I haven't finalized since I'm going shopping tonight.

  • M- Sausage and Potato Bake

    Tell me more, please.  We have a zillion potatoes from our CSA, so I'm always looking for ideas.  I did roasted potatoes and veggies tossed with oil and lipton veggie soup mix a week or two ago, and DH cut a couple of sausages up into big chunks than threw them in there, too (because God forbid he eats a meal without meat).  Is that all you do, or is yours more like a casserole?

    Hmmm what is this? P.S. That brown sugar mustard glaze sounds really good!
    The tacos are super duper easy - Just cook onion and green peppers, frozen corn, and a can of mild green chilies in a skillet, when the veggies are cooked, add in shredded supermarket Roasted Chicken, heat through. In another small skillet, make a sauce by heating up about 3/4 cup sour cream, 3/4 cup Monterey Jack shredded cheese, another can of green chilies and about 2 tblsp milk. Just dump everything in the pan and stir and heat. Top tacos with diced tomato and cilantro or whatever you like! Wa-La!

    And the Marinade/Glaze is this: http://allrecipes.com/recipe/unbelievable-chicken/detail.aspx It is seriously like crack. SO GOOD. I have used margarita mix instead of the lemon and lime before (had to get creative), and it was super yummy.

  • Mon - leftover hamburgers and fruit salad

    Tues - chicken caesar salad

    Wed - Chicken enchiladas or chicken tacos (cooking all the chicken for the week on Monday night so we can sit down to dinner quicker)

    Thurs - Pork chops and butternut squash

    Fri- Fish sticks (we have a 5 year old who LOVES these) and corn from our garden

    @booknerd226  I love to cook and bake so planning dinner each week is the highlight of my Friday nights because instead of going out on Fridays, I sit down with all my cookbooks, Pinterest and misc. recipes and menu plan for the week.

    Yup, that's pretty much exactly what we did, but with a packet of seasoning mix instead of fresh or dried herbs.  It was delicious, and I might make it again this week if we run out of other ideas.  We ALWAYS have potatoes and veggies on hand lately.
