I know our first round of first anniversaries are this weekend.  I am so excited for ours next weekend, although all I can think of is eating our cake :)  A few months ago, I found this article on how to defrost a wedding cake for my friend.  She said her wedding cake was just as delicious as it was the year before.  Hope it helps some of you ladies!

  • H is scared to try it. I figure if it sucks we will throw it out but at least we tried.

  • I can't believe it has been a year!

    We didn't have a wedding cake, we had brownies. Well, we had a cake to cut, but we didn't reall eat it, and our guests had the brownies. Our friend who baked them has told us she will bake us some fresh ones for our anniversary. 

    I hope all of your defrosted cakes are good!

  • We don't have any of our cake either.  We are planning on stopping at the Cheesecake Factory on our anniversary for a slice of the 3 cakes that we got: vanilla bean, snickers and pumpkin.  Yummy!!

  • Our baker (family friend) refused to let us freeze our top, lol.  She's super DUPER crazy serious about her cakes and didn't want us to taste it a year old.  SO, we are ordering a new top.  (Truth be told I wouldn't have eaten year old cake anyway-I know it's fine but I'm just a spaz about that kind of thing.)  

    I need to call her and order a new topper, thanks for the reminder!!

  • We took our top layer home...but ate it all! We figured we'd rather eat the cake while it was still yummy than put it in the freezer and take our chances a year later. 

    We did get more of our "wedding cake" at a wedding we went to in December. It was at one of the sister venues of our venue, and they had the same red velvet cake (different frosting though). So that was fun to get another slice : )

    I'm just going to pick up a small red velvet cake for us to eat on our anniversary.

    Let me know how the defrosted cakes come out...I'm curious!

  • We didn't save our cake either.  In my previous marriage, the top tier was saved and it was really nasty!  I wanted to order a fresh cake from our baker, but she closed her shop down a few months back.  I'll probably just order one from another bakery.

  • Our bakery bakes a new anniversary cake topper for us for free. I've been excited to order ours this week!! I just have to figure out when to pick it up before our anniversary!

  • We did cupcakes for ours.  There were a ton of left overs at my parents house.  My dad has been thawing them out and eating them throughout the year.  He assures us they are still good.  I did have one about 6 months after the wedding and it was fine.  DH and I took two for our anniversary, as there aren't many left and my dad's pants were starting to get tight lol! 

    I'm at the end of the month so you'll all have to let me know how they taste!

  • We didn't freeze ours. Since we're 2 hours away from our wedding location, we'll have to find somewhere here to order from!!

  • Rather than suggesting that we freeze a slice or two, the bakery we hired bakes us a little cake for our anniversary. I'm super-excited for it too!  I suppose I should call and find out the protocol for obtaining said mini-cake.
