I made crock pot lentil soup (I forget whose recipe it is, but it's an NBCer's lemony lentil recipe, and it's delicious!)
DH made Portuguese kale soup
We made baked macaroni with chopped up fried eggplant in it (my solution to not having to eat eggplant parm - it gets lost in the pasta)
DH made chicken salad for lunches, so all the other stuff is just for dinners. Soup and grilled cheese or soup and salads for dinner most of the week, I think. Oh, and DH cut up potatoes and carrots and onions for roasting, so one night we might have some kind of fish with roasted veggies.

Sat- Slowcooker Sweet Potato Chili
It was mostly DH. I decided to do lentils in the crockpot, but then he decided to do everything else. A rainy day yesterday helped. We're not usually that productive! He also spent so much time cooking and prepping that we still have window A/C units in because he failed at taking them out this weekend, and my kitchen floor is disgusting because we never got around to washing it. Oops.

Tuesday - DD and I are going to my parents' since DH has to work
Wednesday - Leftovers/Spaghetti Squash that I got at the pumpkin farm
Thursday - Weekly dinner with the inlaws
Friday - Belated anniversary dinner that we had to reschedule from last week
Saturday - Pizza
Yeah, not a whole lot of cooking go on here this week.

Tomorrow we're having seared tuna pepper steaks over rice with a veg.
Wednesday I'm on my own, but there will be birthday pie for dessert when DH gets home
Thursday is grocery day, so all bets are off until we shop. Since DH's birthday in on Wednesday but he's leading bible study, we'll celebrate on Thursday night.
