Unless something has changed in the last five years, they stock all the regular syrups all year long. (caveat- pumpkin spice, white mocha and mocha are "special" syrups, but they do have the mochas all year long anyway.)
So. If you want a peppermint anything, at any time of year, you can order it.
They will mix anything you ask for, as long as they have the ingredients in the store. So if you want a pumpkin spice anything, and it is pumpkin spice season, order it. It's an extra syrup charge usually (like getting vanilla in your latte).
While you are experimenting, you should know the pumpkin spice and white mocha sauces are really thick - they come in containers that are more like jugs. So they sometimes settle in the drink, especially if you get soy or skim, or try to put it in cider or tea. The regular mocha is made from a powder every morning. Most of the other syrups come in bottles and the barista just sticks a pump straight in the bottle.
Also, you can get something like the chai latte with any tea, as long as you don't mind waiting for it to brew. You order a tea misto. They fill the cup halfway with the tea bag and hot water, and the rest of the way with milk (chai latte recipe is chai concentrate, half a cup of water and fill with milk.)
I love pumpkin bread. So simple but so good. I also really like pecan pie - which is funny because I would not touch the stuff most of my life. I grew up only knowing pecan pie as my gma's runny pie at thanksgiving but a few years ago dh finally got me to try it and omg love. Apple fritters are awesome too.
Oh and super simple but awesome - peanut butter and pumpkin butter sandwiches. So.good. I have my parents and dh's parents looking for pumpkin butter for me on their upcoming trips b/c I can't find it locally.
