We carved them the first weekend in October.
Here's a picture of mine, MIL's, and H's Star Wars one. BIL did a Star Wars one too, but it didn't turn out very well.

My Ovulation Chart
This year I'm a little slower than normal. Only about half my decorations are up. I normally throw a big pumpkin carving party- that's out this year. I bought the pumpkins but I think we will just have our neighbors over to carve them... maybe next week.

DS got itchy waiting for us so he carved his with my dad on Saturday. The ones I bought for DH and myself are still rolling around in the back of my car.
I saw somewhere that if you soak your pumpkin in bleach water for 2-3 minutes once a week it will help them last longer. Dont know if it really works, But Im going to try it.
