S/O: Menu Monday post--fending for yourself
When you fend for yourself, what do you typically make? I'm searching for inspiration as DH frequently has Wednesday church things he has to do and I'm left to my own devices, and omelets, while delicious, get old.

I'll also do grilled cheese and soup, noodles and butter, or oatmeal. My DH can't stand porridge and I love it. Couscous with frozen vegetables is another go to meal.
But I'm going to be fending for myself for the next month, so I think I'm just going to cook regular stuff and eat the leftovers for lunch or send it with him for lunches.

Leftovers (I'm the only one in the house who doesn't turn up my nose at leftovers)
Soup (canned or the add-water ramen type)
If I've got the girls and am in a rush I'll pass by the grocery store and pick up a rotisserie chicken and a French bread. Instant dinner!
Or I'll just grab take-out on my way home. Panera, Chipotle, Cava, or Nando's, usually. It's fast food without being overly fattening, depending on what you order.
Fending for myself usually means eating the easiest thing possible. I cook 5-6 nights a week. If I'm fending for myself, I take a break.
That's no help.
Word. Either a frozen veggie burger or take out if I'm fending for myself. It's an excuse to be lazy.

T and I are on our own tonight, and while there is 1 leftover enchilada in my fridge, I think we're either getting prepared stuff from the grocery or drive thru on our way home this afternoon.
Sugar & Spice
I usually make a fancy grilled sandwich with whatever I can find, a chef salad, or a frozen patty.
Most times it's Panera or Chipotle.

Portobello pizzas. (Roast a portobella top and then layer with pizza sauce and cheese. Bake until bubbly.).
I'll make stuff DH won't eat-either throw a frozen chicken pie in the oven or make quesdillas with cheddar cheese soup (I almost always have tortillas on hand) so I have lunch leftovers for the week. Or just take shreaded mexican cheese and pico if I didn't defrost dinner because DH didn't give me notice. Other times its whatever I can randomly find in the house-pizza, chicken fingers, stuff like that.
My DH prefers to eat pretty healthy most of the time, so I used to binge when he wasn't home. Now that I have DS, I still try to have a more balanced meal when he is gone. He goes kayaking on Thursday nights, so we will often have something easy like homemade pizza (not the dough) with salad or grilled cheese & tomato soup. If I am home completely alone, I would probably just eat a shit ton of Kraft Mac & Cheese. I would also probably make chicken spaghetti. I love it and both DH & DS hate it. DS actually gagged when I tried to get him to eat it and he loves pretty much everything except for lima beans and cantaloupe.
Canned soup

I'll sometimes get Stoufer's frozen lasagna or their french bread pizza,
I'll make a casserole but try to make a half recipe so I'm not stuck with a week's worth of leftovers
Almost anything that can be made in the toaster oven
I've made porkchops with an instant rice side and veggies (it's hard finding smaller amounts of meat cuts)
Once a week or so I'll order delivery from a local restaurant that has HUGE calzones and awesome buffalo wings
Cereal or a bagel with slices of cheese on it
Chicken sausage with pasta (I chop the sausage up into 1/4 slices and heat them up in the pasta sauce)
I like the individually frozen chicken breasts by Perdue that I pick up at BJ's. That way I can defrost 1-2 depending on the number of people being fed.
I like making a small amount of soup with about 16 oz of boxed broth, about 1-2 c. of tortellini and about a cup or so of frozen veggies. Once the tortellini are done, so is the soup.
Understand that I eat alone 4-5 weeks at a time and only have to plan to feed two people for 4 days before the cycle repeats.
@booneybear, I make what he doesn't like, too. I love this one recipe with anchovies, garlic, squid, and pasta that he hates, so I will make that for just me but I can never find squid by the pound, only prepackaged, and I only need a half pound for just me, so I have to plan accordingly because it's impossible to thaw just half of the tray. I may have to try your hummus melt and portobello ideas, though.
Is that meant to be a duh remark? :P
Sigh. I love grilled chese but mine always suck.
