I love a good black bean/corn/avocado salad. Lately I've been mashing the avocado with the dressing first to make a sort of guacamole for the beans/corn/onions. Yum!
It's not really a food -- but I love making a refreshing lavender lemonade. I take lavendar buds and infuse them into water with a slight simple syrup and of course squeeze fresh lemons -- it's simple and delicious.
My fave is a summer fruit salsa! Chop strawberries, kiwi and granny smith apples into chunky salsa size pieces. add 2 tablespoons of OJ and 1 Tbls of brown sugar (both can be more to taste) sit and let sit for an hour to marinade. Serve with cinnamon sugar pitta chips! Yummo!
My family makes this fruit slush with bananas, pineapple, strawberries, orange juice, and jello that always takes me back to church picnics from my childhood.
Caprese salad is my favorite for the summer. Nothing like fresh mozzarella, with basil and tomatoes from the garden (when they're ready). So light and delish! And quick and easy to make too.

Bonus points if they're fresh veggies from the garden.
