Maple Mustard Chicken on the grill or stovetop that I usually pair with a summer Veggie Tian
Enchilada Chicken stew in the crockpot. I break out the crockpot a lot in the summer.
Philly Cheesesteak Stuffed Peppers I made it just last night actually.
Kabobs on the grill is something we have probably every other week in the summer.
I make macaroni salad (made with rice noodle macaroni and canola oil mayo since most mayo is made with soy) for any summer cookout gathering. I don't have a recipe for that. I wing it.
I also make chicken salad a lot during the summer. I prefer the fruity kind over the savory, so I throw sliced green apples, green grapes, pecan or walnuts, diced celery, and shredded chicken together and then mix with onion powder, garlic powder, salt, pepper, and a little bit of mayo to taste.
If I do a hot pasta dish, I lighten it up and use veggie pastas instead of rice pasta. Zoodles are great for that.

I pretty much like to make anything on the grill. We started doing grilled salads last year actually grilling the lettuce and it was really good.
