My MIL's vegetarian, so I've actually done quite a bit of meatless experimentation. I've had a TON of failures. I'm just not a non-meat person, I guess. Also, H and I are GF, so I try to avoid pasta dishes.
My husband cooks a bunch of Indian vegetarian dishes. Indian vegetarian dishes are by far my favorite vegetarian dishes. It's probably because that is the native food- it was a meat filled diet that's been adapted. Also, all the spices.
My brother's a vegetarian, so when he's around I'll usually make roasted vegetable lasagna, risotto or pasta with seasonal vegetables, quinoa salad or homemade gnocchi.
DH and I are not vegetarians, but we are trying to eat at least one meatless meal per week. Some of our favorites are fried rice, Chinese stir fry with noodles, and cottage cheese and onion pierogies. I am always looking for new recipes to try!

We are not vegetarian and I'm diabetic so we don't eat very many noodles or pasta.
I have discovered though that low carb tortiallas are a great option - you can make breakfast burritos or bean and cheese quesadillas.
You can roast some butternut squash and eat it with a couple of fried eggs. I've recently fallen in love with broccoli slaw and it's super awesome versatility. You could sautee some, add in some black beans and top with a fried egg...OR you can add in some tofu and asian flavors for a lo mein.
You can always make an all bean chili or a split pea soup (minus the ham). Egg salad with avocado. What about an LTT (lettuce, tomato, tofu) sandwich (I just made that one up).
The possibilities are endless!
I have a lot of recipes on my website: www.quarterpastnormal.com
