Tasty Tuesday

Ok, recommend your favorite tasty yet healthy meals for lunch and dinner. I've found a few new recipes like zucchini tots, but I need more. I keep making a resolution to eat healthier and work out more which lasts for maybe a week. Then a few weeks later I do it all over again. I started using the myfitnesspal app again today.

  • Maybe the zesty italian chicken stir fry I made last night would qualify as healthy. You mix 1 cup of italian dressing (it could be fat free), with 1 tbsp of soy sauce, and garlic cloves or powder to make the sauce. Toss the cut up chicken in enough sauce to coat it and let it sit for 5 minutes (I do more like 20 in the fridge). Cook the chicken and then add stir fry veggies and the rest of the sauce. You could use fresh snow peas, green beans, red & green peppers, etc. I just buy the frozen stir fry veggie bag. Cook until veggies are tender. Then eat! Yummy!

  • I really need to get back on the bandwagon again. It's been a long time, but right now, still living with the parents and not going to work, allows me to have a lot of unhealthy things. Plus, dinner with them is always awful. 

    That sounds really good though Megan. And I am not of any help really. I am not good at coming up with recipes right now. I would say to keep it simple, and pinterest.

  • I have squash soup on my list for Friday. The Italian chicken stir fry for Saturday. I need probably 3 more ideas for next week. Preferably something that had leftovers so I don't have to cook every night.

    Jen I love candy to much to give it up completely. And carbs and dessert. I made wheat germ muffins yesterday with cherries in them. Add a little honey and I get a carb dessert that is healthier than a cupcake. But I still plan to indulge in the real thing occasionally. :)

  • I made a pork loin that I browned on the outside, then cut up yams, potatoes, apple, onion and carrot underneath it, and roasted it all together. Maybe that?

  • So I went to make the chicken stir fry and forgot to cut the chicken breasts into pieces. Forgot to add the soy sauce to the marinade so I just added it to the skillet. Then I forgot I had the heat turned up so I slightly burnt the bottom of the breasts. Ugh! Not my nigh to cook. But it does smell good.

  • But it turned out well! The chicken was amazing and I had enough dressing left to have sauce for the veggies. Thanks for the great recipe!!!
