  Both are pretty. Maybe you could have both. There are all kinds of varieties of dahlias -- maybe you could find a variety that has a smaller bloom and combine those with the cabbage roses.  
  
  There is also the choice what's in season, in the way of flowers --- glamelias are, so are any type of mums. Any type of lilies are, also.

  Depends on the look you are going for. The roses IMO have a softer more romantic look while IMO dahlias are a bit more dramatic and colorful. I think you may have an easier time finding dahlias.

  Is it common to use Gerbera Daisies as bouquet. I saw them in here http://www.flowerscanada.com/gerbera-daisy-bouquet and I thought they looked beautiful.

  Very common to use Gebera Daisies and the hold up well too and come in such a variety of great colors.
