Taco Spaghetti?

I was reading an article about 7 easy dinner recipes and Taco Spaghetti was on there.  Anyone ever have it?  Would you make it?  I'm on the fence about it.  I think it could either be really good or really bad...

ingredients

  • 5 ounces packaged dried spaghetti, linguine, or fettuccine, broken
  • 1 pound ground beef or ground raw turkey
  • 1 large onion, chopped (1 cup)
  • 3/4 cup water
  • 1/2 of a 1-1/4-ounce envelope (2 tablespoons) taco seasoning mix
  • 1 11-ounce can whole kernel corn with sweet peppers, drained
  • 1 cup sliced pitted ripe olives
  • 1 cup shredded Cojack or cheddar cheese (4 ounces)
  • 1/2 cup salsa
  • 1 4-ounce can diced green chilies, drained
  • 6 cups shredded lettuce
  • 1 cup broken tortilla chips
  • 1 medium tomato, cut into thin wedges
  • Dairy sour cream (optional)

     

    directions

    1. Cook pasta according to package directions. Drain pasta; rinse with cold water. Drain again.
    2. In a 12-inch skillet cook ground beef or turkey and onion until meat is brown. Drain fat. Stir in water and taco seasoning. Bring to boiling; reduce heat. Simmer, uncovered, for 2 minutes, stirring occasionally. Stir in cooked pasta, corn, olives, half of the shredded cheese, the salsa, and chilies.
    3. Transfer mixture to a lightly greased 2-quart round casserole. Cover and bake in a 350 degree F oven for 15 to 20 minutes or until heated through. Sprinkle with remaining cheese.
    4. Serve with shredded lettuce, tortilla chips, and tomato wedges. If desired, top with sour cream. Makes 6 main-dish servings.

  • Hmmmm I am on the fence too but it sounds like it could be tastey....almost like nachos on pasta.

  • That's definitely NMS. I like my italian and mexican food authentic and far apart.

    I don't think it is as ghetto as it sounds. 

    Hell, my husband will eat anything.  I will try it and let you guys know how it is.

  • I would totally give it a whirl, sounds tastey to me.  I do eat "ghetto" food such as cut up hot dogs in mac n' cheese, I guess that's what growing up poor does.
  • Once in a while we make something like this.  DH loves mexican!  At first it wasn't my fave but I keep adding things to it to make it more than just noodles, meat, and cheese.  It's a super easy meal.
  • hahah oh man...I totally hear ya Sheri, there are still some ghetto dishes I cant let go of....Fried bologna being one. Growing up on government cheese will do that to a girl ;)

    I had a very bad inncedent with cut up hot dogs and mac and cheese at a babysitters house though...so its a no go for me.

    Sheri - I grew up eating hot dogs and eggs if it makes you feel any better.  I still make it every once and awhile.

    Drew is Mikey!!! lol...he will seriously eat anything.  And probably has eatin everything.  Culinary school did that too him. lol

    Not saying I wouldn't try it, but I'm just not sure I could get past having a hybrid of two different foods like that.

    I guess I can get over the noodle part because we have a pasta jambalaya which has meat and spices.  It was strange at first but definatley a very nice alternative to the rice.  This seems similar to me and I dont consider jambalaya to be ghetto at all. I also dont consider noodles to be "italian".
  • I think for me its the whole noodles/chips/beans combo I can get over... It would be a weird squishy cruchy texture

    There are no beans in the recipe and the chips are a garnish and I would not use. LOL

    Seriously, this combo got me through my first few months of pregnancy. 

  • I'm not a big fan of spaghetti in anything other than its basic form of noodles and sauce.  My mom used to make this spaghetti pie where the noodles were the crust...gag me.

  • I don't know, I might like it.  My dd keeps wanting to make Sketti Tacos! lol  I keep telling her she can do that when she has a sleep over or something.  NOT for us for dinner! lol  She lucked out and was able to make one at a Sizzler's we went to. She was so excited! haha
