What should I make?

I'm going to a potluck baby shower this weekend, and I can't decide what to make.  The shower is at 11am, and here are the items other people are bringing:
Artichoke dip
Quiche
Cinnamon Rolls
Zucchini Bread
Mac & Cheese
Some sort of bacon dish
A lemony dessert

Suggestions?  The guest of honor is vegetarian, so it'd be nice if I could bring something that isn't full of meat.*

Re: What should I make?

  • How about something sweet?  I see that there is lemon, but what about something either chocolate-y or caramel flavored?
  • Fruit bruschetta - can easily be adapted for whatever fruits you prefer

  • I think either a finger food dessert or a cheesy appetizer is in order.

You really can't go wrong with something easy and universally appealing like mini cupcakes or cookies.

    OR CAKE BALLS!

  • If you prefer something with chocolate and carmel, these are easy and delicious.

  • I would suggest either a baked cheese thing or fruit salsa.

My fruit salsa is chopped strawberry, blueberry, kiwi and apple with a little bit of jam mixed in and lime juice. Eaten with cinnamon pita chips.

    Mmmmm.

  • Go to Trader Joes. Select 4 boxes of feta and carmelized onion puff pastry. Bake. Walla!

  • Because of the Quiche, I would make a humongous yummy green salad.

  • Hmmm, I'm liking the idea of the fruit salsa and cinnamon pita chips.  How much work is it?  I'm feeling lazy.

  • The fruit salsa just requires chopping.

Stacy's provides the cinnamon pita chips.

  • Are you my oatmeal butterscotch cookies lover twinsie?  Those.  I always like cookies b/c they are so easy to grab and eat while holding a drink, standing up etc.

  • I'm pretty sure everyone is your oatmeal butterscotch cookie lover twinsie because they are delightfully delicious and anyone who says otherwise is a communist who hates rainbows.

I was thinking that sweet had already been covered pretty thoroughly with a lemon-y dessert, cinnamon rolls, and zucchini bread.  But I should definitely make those cookies for my own consumption.

Do you have a good recipe for these Fallin? Ever since I made those pumpkin blondies with chocolate and butterscotch chips I have been dying to make cookies with that combo.

  • The lack of chocolate in the dessert category makes me sad.

I can only advise you based on what non-meat things I would eat right now.  Falafel with hummus and tahini, green bean fries, potato skins, and mozzarella sticks.  Evidently I'm feeling a deep biological need to fry something.

  • We just use the recipe on the back of the Tollhouse butterscotch chips bag.  My H tells people it's his "secret family recipe."

  • But what kind of quiche should I make? Spinach, mushroom, and cheddar or something more exciting?

  • Lorne's aunt made an asparagus quiche that was amazing.

I love the quiches you normally make.  Are you bored with them?  I would prefer no mushrooms in one of them, if possible.

I know, I've had it bookmarked for awhile. We're going to do some kind of hashbrown quiche Thanksgiving weekend, but I'm going to be lazy and use frozen hashbrowns.

  • Gruyere, of course.

  • This post is making me reeeeeeeeeal hungry.  I'm not sure if I want a cookie or some delicious hashbrowns more.  I really need to be near my kitchen right now.

I wonder if I can find breakfast for dinner near my hotel.

Cali, I like the fruit salsa idea a lot.  That sounds delicious, and sweet without being overly dessert-y.

A little bored, but I guess I haven't made one in over a year. I was going to skip the bacon this time since A is veggie.

No mushrooms...I dunno, I think that's impossible. Mushrooms and I are pretty inseparable.

Maybe I'll do two, one spinach, green onions, and crimini mushrooms with sharp white cheddar (that's one of my standards), and one asparagus and goat cheese...with caramelized onions? Does that sound like it goes together?

If anyone is interested, I use Smitten Kitchen's quiche adaptation and just change the filling ingredients. However, I find it does not fill my tart or pie dishes, so I double the filling.

    Spinach Quiche
Adapted from Bon Appetit, October 1991

One half-recipe of Martha Stewart?s P?te Bris?e, rolled out and pressed into either a pie dish or removable-bottom tart pan.

1 3-ounce package cream cheese, room temperature
    1/3 cup half and half
    3 eggs
1 10-ounce package frozen chopped spinach, thawed and drained
    1/2 cup grated cheddar
    1/4 cup grated Parmesan
4 to 6 green onions, sliced
    1/4 teaspoon salt
    1/4 teaspoon pepper

Preheat oven to 425?F. Beat cream cheese in medium bowl until smooth. Gradually beat in half and half and eggs. Mix in remaining ingredients. Pour mixture into prepared crust. Bake until crust is golden brown and filling is set, about 25 minutes. Cool 10 minutes before serving.
