all the Scandinavians out there ... sandbakkels?
I remember having sandbakkels as a kid, and I really liked them. I'm going to make a bunch of Norwegian treats for the holidays this year and want to make sandbakkels.
My question is about filling. I remember having fruit-filled sandbakkels as a kid, but I have no idea what kind of fruit. I've been googling, and
all the recipes I've found just say that they can be served plain or
filled with fruit. No mention of what kind of fruit. Berries? I think I
remember berries. Raspberries? Strawberries? Lingonberries? Blueberries?
Any suggestions?

Thanks for the picture because as 100% Scandinavian I have no idea what those are...they look and sound tasty though!!
I guess I was just the rosette, Krumkaka, lefsa, lutefisk Norweigen.
Ditto (minus lutefisk. I've never had that). I've never seen or heard of them!
I would vote raspberry but that is based on never having tasted them but just imagining in my head what they taste like. :-)
lol, i'm the same! and OMG rosettes... oh wow. what i wouldn't give for some of my grandma's rosettes right now. (may she RIP).

I also asked a friend of mine (also of Norwegian ancestry) and she says that her family always eats them plain with no filling. Maybe I'm in the minority for wanting a filling.

Yeah, it looks like just fruit, no sauce or anything. Although they'd probably be good with fruit preserves too. I'll experiment.
I've had my great-grandma's sandbakkel tins for years but have never made them before. My grandma and mom don't make them, so I haven't had them since my great-grandma died almost 20 years ago.
I also have her rosette irons ... I'm going to make rosettes too. Yum.

Sandbakkels are my absolute favorite Christmas cookie. We've always had them plain, but I'm sure berries would be good as a filling. I would do some with and some without a filling because they are so yummy on their own.
They are time consuming to make because of the tins. It's take a bit to get the dough even in the tin and then they can be tricky to get out in one piece. Good luck!
