holiday recipe raves

our christmas dinner was all new recipes for me and they were seriously awesome!

prime rib with thyme au jus

i got a smaller piece so i just cooked it 15 minutes/lb so it would be rare/medium rare. i also used veal stock instead of beef stock for the au jus.

i halved the recipe, cut back on the butter, and added some sour cream. these were the best mashed potatoes i've ever made and i think i may like them more than my aunt suzanne's (which i love, love, LOVE). i also love that they can be made the day before, just had to reheat on christmas day.

these were very good and easy to do just before serving dinner

for me, it's just not christmas without Chocolate Trifle so i made a small(ish) one for josh & i (instead of the huge one required for my family).

  • michele, i was licking my potato masher (which was what i used your 2008 secret santa gift card buy!) like a kid licks a spatula covered in cake batter. they were sofucking good!!

     I do that every. single. time. I make mashed. Love, love, love them. I would much rather lick a spoon with mashed on it than a spoon with brownie batter, YUM-O.

     (We had prime rib for christmas dinner too, thanks to my mother in law!!)

  • That prime rib recipe is AMAZING! We make it every year. Sadly, there were too many cooks in my kitchen so our rib came out medium instead of medium rare. It was still good, DD just had the remaining 2 pieces (over 1 lb) for lunch and was asking for more! 
  • i laughed out loud when i read your post about V eating all the leftovers and asking for more, that is one to tell when she gets older! we have like 2 pounds in the freezer and i think i'm just going to make a really big steak when we feel ready to eat hunks of beef again.
