My kids didn't whine too much today, thank goodness. Owen seems to have turned the corner with his cold. Maggie's going through a "throw a fit at bedtime and naptime" phase, but it will pass. She told Mike last night his favorite song is "John Denver." He hates JD so where she got this is a total mystery.
That story is just chilling.

This has reminded me how much I like Apt. Therapy and should check it more.

Fallin, this is a really basic lentils & rice recipe, but it has some nice variations suggested at the end. Very much a recipe you could build on and improvise.

We made this tonight, it was really easy and super good. We did the poached egg and everything, and I'm happy to report we poached successfully.

I like with pork. I'm getting the sense that a little bacon, onion, garlic, carrots and celery form a good foundation.

That white bean stew looks yummy. I'd maybe use kale instead of chard. Chard is one of the few greens I dislike.

Lentil Spinach soup
1 1/4 cup lentils - no need to soak
3 cups water
10 oz spinach
1 or 1/2 onion depending on your taste
at least one clove garlic depending on taste
salt
1 lemon
Chop onion and garlic and heat in pot with olive oil until onion is soft. Add lentils and 3 cups of water. Add a couple pinches of salt (sorry I don't measure this). Heat to a boil then reduce heat to low and simmer for 1 hour covered.
Add spinach. Zest the lemon and add the zest, then squeeze the lemon juice in as well. Cook for a few more minutes so spinach is heated. We like this soup with a nice crusty bread and homemade garlic butter.
