AW: Our Valentine's Lunch (PIP)

Matt has to work tomorrow night, so I planned a Valentine's lunch today (he's working tonight too).  He's in charge of the official Valentine's celebration, which will be on Friday.  Anyway, lunch turned out great so I thought I'd share.  On the menu, Individual Beef Wellington with roasted broccoli & garlic and pan fried red potatoes.  For dessert, chocolate covered strawberries and shortbread.

  • Individual Beef Wellingtons - My cookbooks are packed and I couldn't find them, so I can't tell you the exact recipe.  But this is close: Pampered Chef Individual Beef Wellingtons  I use less basil.  I also sear the beef one minute on each side.  The recipe on the linked page is not complete.  Cook at 425 for 30 minutes.

    Broccoli - Roasted Broccoli with Smashed Garlic

    Pan Fried Red Potatoes - I don't use a recipe.  I just take a few red potatoes and boil them until almost tender (don't overcook or they will fall apart).  Drain and toss with some olive oil, butter, salt, garlic powder, and Italian Seasoning.  For 4 medium red potatoes I use 1 T olive oil, 2 T butter, about 1/2 t salt, 1/2 t garlic powder, 1 t Italian seasoning.  Sometimes I substitute 1-2 cloves of pressed garlic for the garlic powder.  Heat pan on medium high.  Fry potatoes, turning and cooking until golden brown on all sides.
