Ladies these are supposed to be for the kids but they are so good! I was so pleasantly surprised. Anyway, I thought I'd pass along an easy, healthy lunch idea.
Ingredients:
2 Cups of any veggies chopped
1/2 cup Seasoned whole wheat bread crumbs
1/2 cup parmesan cheese
1
? cups Shredded cheddar cheese
3
Large eggs
Directions:
1.
Heat oven to 375 and lightly coat a baking sheet with olive oil and set
aside.(I just used parchment paper instead.
2. Combine all remaining ingredients and mix well.
3.
Shape mixture into nuggets or fun shapes such as squares or squigglies
etc..and place on baking tray. Bake for 20 to 25 minutes, turn nuggets
over after 15 minutes. Serve warm
I put them in a baggie and piped them into "fries." That took about 5 minutes off of the baking time as opposed to shapes that are wider.

I made these once a long time ago, but forgot about them. thanks for the reminder! The fry idea is great too.
ETA: Do you really just put in chopped raw veggies? For some reason i think i remember steaming them before? If they are raw, I assume they'll have to be chopped very very finely in order to make into a ball or to squeeze out of a bag?
