I had Riscky's BBQ for lunch and DH is on his own because I'm having dinner with an old friend that's in town tonight at Boomerjacks.
Today I had chicken tortilla soup for lunch. I actually thought ahead and made a huge pot of it yesterday so DH and I can have it for lunch all week and save money.
Tonight we have plans with friends.
I found a recipe online for chicken. The crock pot is my best friend - if I can make it in there, I prefer it. That way I can start it in the morning and by the time we get home it's done. So, it's a whole chicken, but you put an onion inside of it for flavor. I am doing that tomorrow - so we shall see how it turns out.
Great minds! I did the same thing yesterday. I made the Rachel Ray Chorizo and Chicken Tortilla Stoup. Ben LOVES it. I also made chicken salad, cut up all my veggies for fajitas for later this week and made turkey burgers which I froze.
All I've had so far is fruit, an Activia smoothie, wheat thins and laughing cow cheese. I'm super busy. Plus allergy medicine really supresses my appetite sometimes. I have to make myself eat something. Tonight will be the aforementioned soup.

Lunch: Salad with dried cranberries, pecans and poppy seed vinaigrette; green beans with garlic and onions and chicken enchiladas sans the tortilla and cheese (onions, bell peppers, green sauce and some chicken)
Supper: it will either be lemon chicken or enchiladas with some kind of green veggie.
Lunch - PB&J and chips
Dinner - no clue...maybe I will get some inspiration from you ladies!

Lunch: Here is a random fact about me. I eat the exact same thing for lunch 5 days a week. 1/2 turkey sandwich, carrots (yes...same # everyday!), fruit cup of mandarin oranges, cup of sugar free jello (always lime or orange).
Dinner: Crockpot Italian chicken, green beans and garlic bread.
I have not attempted this with chicken but I've made it with pork in the past so I think it could work. Grill your chicken to get it brown on the edge just a tad. In your crock pot layer the bottom with your chicken then the cut up sweet potatoes and yellow onions and pour a can of apple pie filling over top, put it on low for several hours (I put it on in the morning and it's done by the time we get home). I don't imagine the order of ingredients in your crock pot matter. I don't remember measurements very well but just adjust according to your tastes and how much you like what ingredient.

Dinner - Grilled marinated chicken, steamed rice, and steamed broccoli and carrots. I finally got the rice cooker we got as a wedding gift out of the box and holy crap, I can't believe I never owned one of these.
Lunch - had nothing

Lunch - pizza that was not very good
Dinner - no idea. I really need to go to the grocery store but I hate doing it, and DH is gone so I don't like cooking for just me.

What's a rice cooker??
Summer - I'm sure there is a huge realm of things you can do with it that I have no idea about...... but, here is what I know.
I put a cup of jasmine rice (or any kind you like) and 1.5 cups of water in the thing. I put any raw vegetables I want in this tray in the top. Close the lid and push down the button and about 10 minutes later I have perfectly steamed veggies and rice.
How is that for undomestic?
Lunch - Eh, just a Lean Cuisine
Dinner - Haven't decided. I bought groceries for four meals this week: Shredded pork tacos with chimichurri and tropical fruit salad; BLT pasta salad with crusty bread; Orange-ginger chicken with rice and asian slaw; and Jerk shrimp with rice and corn on the cob. So it will be one of those.
I've been using the slow cooker a lot more lately, too! I've been resistant to it, but I'm starting to come around. I've made shredded beef for sandwiches, beef for beef and broccoli, and my favorite one was I cooked some chicken breast in there with a jar of green salsa. Then when I came home, I shredded it up, assembled enchiladas with the chicken, onions, and a little light cheese, then covered them with more green salsa and light cheese. They were so good!
I can't not cook rice at all! Even with a rice cooker, which is sad since my DH is South East Asian so he loves rice. How did you get it the rice to cook properly in the rice cooker? I have told my DH I may always fail at cooking rice

Dinner - Probably fajitas, only because it's quick and I've got cheerleading practice to run tonight.
It is so easy! I put 4-6 (depending on how many I am cooking for) frozen chicken breast in the slow cooker with 1 cup FF chicken broth. Then I sprinkle one package of Italian seasoning on top. Cook for about 6 hours on low (I cook it overnight).
(The Italian seasoning I use is very cheap and flavorful.I just buy it at Walmart and it is on the same aisle as the salad dressing, but is a powder seasoning.)
DH and I love shrimp, but I am so intimidated to buy it and cook it. Any tricks of the trade??? Frozen vs. fresh? Best way to cook prepare? How to know when it is done?
Well I love coconut shrimp but it can be a PITA to cook.
Another way I like to cook it is with shallots, butter, garlic and noodles. It is oh so yummy but there is a lot of butter the way we liked it. Typically shrimp turns pink when it is done.

I buy it frozen because I'm cheap so I shop at Walmart, and that's all they have, lol. I like to get the kind that are already cleaned and shelled because it takes time. If you get them fresh you can get them EZ-peel (deveined, you just have to pull off the shell) or you can devein them yourself, which is easy but takes a while.
The main trick to shrimp is to not overcook it. It turns pink and opaque when it's done, and it's pretty quick, maybe 5-7 minutes. If you cook it too long, it gets rubbery and that's gross. I cook shrimp a lot of different ways. This week I'll be sauteeing it with jerk seasoning and a can of tomatoes. Last week I seasoned it with chili powder and cumin and grilled it to go on top of a Southwestern-inspired salad. The week before that I sauteed it with soy sauce and a little sesame oil to go on top of peanut noodles.
Thanks for all the tips. Maybe one day I will get brave and try it. In the meantime, can you just come over and cook for me??? All your suggestions sound so yummy!
Yum indeed! But, I guess this is me being domestically challenged... but what's "FF" chicken broth!?
