What are your dessert staples? I don't cook often and this is the first time I'm cooking for a holiday for my in laws. I need to impress but not over extend. Ideas?

Chocolate cake + pudding + crushed-up Heath bars = Awesome.

In the trifle theme- death by chocolate:
devil's food cake, plus chocolate pudding, homemade whipped cream, layered, and topped with chocolate sprinkles.
Cheesecake isn't hard. It takes a bit but doesn't really require lots of skill. I make this one, with or without the glaze:

I second, or third, the trifle idea. I make one with brownies, chocolate pudding, Coolwhip (or you could be gourmet and make your own whipped cream), and crushed heath bar. People go crazy for it, and it's the easiest thing ever.
Another suggestion: Strawberry pies
1 can sw condensed milk
1/3 cup lemon juice
2 cups sour cream
2 cups strawberries, sliced (I usually add more)
16oz Coolwhip
2 pie crusts
Mix milk and lemon juice. Fold in sour cream & 8oz Coolwhip. Add in strawberries and stir. Pour mixture into pie crusts and chill overnight. Before serving top with remaining coolwhip (and some sliced strawberries, if you just feel like decorating.)
My family makes this every year for Easter, it's super easy - but to DIE for.
