Random Q re: Lasagna

A while ago a discussion about freezing lasagna came up and several people mentioned that they didn't cook their noodles before baking. 

I am thinking about making lasagna to freeze tonight and bake later, if I use regular noodles (NOT no-bake), can I layer them without cooking them first? I really don't want crunchy noodles!

  • What if you cook them partially?  I always cook my noodles when freezing lasagna, so I would be nervous not to boil them partially.

  • I never cook my noodles BUT I never freeze uncooked lasagna either so I am not 100% sure if it would be the same.  I would partially cook them then freeze.

    This is what I do if I am freezing it unbaked.

    However, I usually just bake a pan of lasagna for dinner then portion it out into individual servings so I have quick lunches that just require heating up.

  • Hmmm so if I bake it before freezing then I can not deal with cooking the noodles? I will probably do that - it sounds like the best plan.

    This is what I usually do as well.  We'll usually eat about half of the pan between dinner and maybe leftovers the next day.  Then I just freeze 4-6 pieces or so in containers to microwave later. 

    I've never actually frozen an unbaked lasagna before so maybe that's not helpful.  I have a recipe for a really good broccoli lasagna and also a spinach lasagna if you're interested.
